To Die For Blueberry Muffins
This recipe is a WINNER! I substituted buttermilk for the milk and used a combination of fresh and frozen blueberries. I agree that the recipe made WAY too much topping than was needed, but don't leave out that step--it definitely gives the muffins that great 'muffin-top crunch'! The muffins were light and very moist (almost cake-like!). I was able to make 9 regular-sized muffins using this recipe. Can't wait to this recipe with other berries--- Time to brew some coffee to go with these delights!

Ham and Cheese Bowties
Had to make a dish to bring over to a last-minute cookout and chose this one because I had all the ingredients on hand. I used Colby/Jack cheese, left out the mustard, and used evaporated milk to make things extra creamy. Also topped the dish with a combination of panko bread crumbs and grated parmesan. DELICIOUS! Will have to make again!

Banana Pie
Delish! Cream cheese MUST be softened. Changed the cream cheese amount to 6 oz. and the milk to just 3 cups. Also used 3.4 oz EACH of instant banana and vanilla pudding. Made filling in a food processor (easy!) Pulsed the cream cheese first (with a little of the milk)until smooth, then added the rest of the milk and pudding mix and pulsed until smooth. Poured into pie shell with sliced bananas and topped with cool whip. Result was a thicker, more custard-like pie-- YUM! Will definitely make again :)
