The Best Lemon Bars

Great recipe! I usually like to try as-is before altering too much, however I did make a couple minor modifications based on all the other positive reviews: 1) added approx. 1t lemon zest to crust, and 2) sprinkled powdered sugar on top immediately after removing from oven. They turned out great, and I will definitely make these again!

Grilled Rock Lobster Tails

This was my first time cooking lobster, and honestly, the recipe sounded like it might be too bland for my taste...was I wrong! I took a taste of the marinade and thought it tasted like olive oil and couldn't recognize any of the other flavors. I was pretty skeptical of how the lobster would turn out, but the flavors all came together when I basted the tails and grilled. I was really happy with this meal and flavor... just wish I would have cooked more than two tails!

Gourmet Mushroom Risotto

Outstanding recipe. Based on other reviews, we used half the mushrooms. We kept everything else at the same quantity, though I probably added a little extra parmesan to the top before serving. I know we'll make this again and again!

Poppy Seed Fruit Salad

I made this for Easter dinner and it was a hit. I made a few adjustments: omitted poppy seeds, used half of a pineapple, half a small watermelon, same amount of strawberries & blueberries, added kiwi, added red grapes cut in half, and substituted pistachios for the almonds. Despite having "extra" fruit v. the original recipe, I kept the honey and limeade at the same measurements and it was perfect. I think the honey/limeade sauce is the key, and you can really add whatever fruit you like! One other tip that I picked up from another reviewer - it does help to cook the honey and limeade over low heat for a few minutes to get the two to blend well before pouring over the fruit. Thanks for the recipe - I'll make this again!

Creamy Cajun Shrimp Pasta

This was excellent. I didn't have angel hair pasta, so I used cheese tortellini instead. I had some leftover artichoke hearts and green pepper, so I added them when cooking the shrimp. I also topped with cajun grilled chicken because I didn't have very much shrimp. Final touch was some grated parmesan and chopped green onion. Very tasty!!

5-Minute Guacamole

Yum! I made a few changes - instead of adding salsa, I used a small chopped tomato. Like other reviewers, I mashed the avocado with a fork, and I added cilantro and green onion. I also added lime juice to preserve this for a little longer. Good base recipe to begin with - thanks!

Kai Kang Dang (Chicken Curry with Coconut Milk)

I haven't always liked curry - until my husband made this dish. It is extremely flavorful and not too heavy. The amount of basil sounds like a lot, but it's not overpowering.

Vegetarian Phad Thai

Great recipe - one of the best Thai recipes I've ever had. Just as another reviewer recommended, I also substituted curry paste for paprika - it was delicious. The next time I make this I might try reducing the amount of peanut butter to lighten the dish.

Cappuccino Mix

The recipe "as is" is pretty good! I am giving this as a Christmas gift to coworkers, so I had to sample before gifting ... pretty tasty. Only suggestion is to add extra cinnamon or other similar spice. Overall, good flavor!

Super Calzones

I thought this recipe was OK; if I make it again, I'll definitely omit the cream cheese - it left an odd flavor and texture (I might try the suggestion from another reviewer to use ricotta). A couple suggestions/substitutions: I did not have hamburger or sausage, so I used cubed ham instead, and I topped the folded calzones with garlic butter, italian seasoning, and grated parmesan.
