I try to spread the word that cooking isn't that hard and can be incredibly satisfying to make a bunch of people happy (although I'm usually overcritical of my cooked meals). I also have type I diabetes and have to count the carbs of my meals.
My favorite things to cook
Traditional foods, especially Italian food (although there's always a place in my heart for Italian American food). I like cooking to be simple so that you can cook multiple delicious things at once.
My favorite family cooking traditions
I'm the cook, my mom and little sister are the bakers.
My cooking triumphs
I recently held a get-together for my wife's birthday and flooded the room with appetizers and was uncharacteristically satisfied with every appetizer I made.
My cooking tragedies
Making a soup with 12 tablespoons of vegetable base instead of the 12 teaspoons that were needed.

Slow Cooker Roast Beef
I have yet to be brave enough to try and cook the beef as long as in the recipe. 10 hours on low has always been perfect and the long line of guests this has been prepared for agree! Excellent recipe that is cheap and easy to boot!

Spinach and Leek White Bean Soup
My wife, who isn't as comfortable with cooking as I am, made this soup and it was spectacular! One of very few recipes that I wouldn't tweak the recipe.
