Tortellini Bacon Broccoli Salad

I'm sorry but the coleslaw dressing just didn't work for me. I used my favorite brand, but it was very disappointing. Because neither the tortellini or the bacon is cheap, I couldn't bring myself to just throw it away. I ended up using my salad spinner to spin off the rest of the coleslaw dressing and used bottled ranch that I had on hand to appease my household. Next time, I'll just make my own dressing.

Russian Green Bean and Potato Soup

Made this soup for dinner last night. It was a HUGE hit. Even my husband loved it and he is not a soup fan. To accommodate him, I added diced smoked sausage to the party when I added the potatoes and green beans. Also, for his benefit, I added about a 1/4 cup of heavy cream which made it more stew like. But the flavors are phenomenal and it still would have been delicious without those two additions. Thank you for sharing.

Chicken Enchilada Casserole II

This was very good! I never seem to follow a recipe exactly. I take what I like and tweek it, make it my own. But I review only on the original recipe. If I don't like my end result, it wouldn't be fair to blame the recipe. That being said, I did make changes to this one. First of all, I fried the cut strips of CORN tortillas in canola oil because I hate the gumminess of a baked flour one. I cut the sour cream back to 8 oz. and used 3 chicken breasts since this was only serving 4. I also baked my chicken in water, seasoned with garlic powder, seasoned salt, pepper and taco seasoning. I mixed the sour cream, salsa, cream of chicken soup, onion and shredded chicken together. Placed the crispy tortillas in a sprayed 9x13 pan. Topped with the chili beans, and spread the chicken mixture on top. I topped it off with 2 cups of shredded cheddar, covered with foil and baked for 25 minutes at 350F. My husband and sons loved it as did I. Because I think those little changes made it a 5 star recipe, I only gave this one a 4. I just know that we wouldn't have liked the flour tortillas as much, and frying them made them even crispier, which was the only big change to the recipe.

Pepper Bread

the bread bakes as one. Think of this recipe like that of a monkey bread. Once the individual pieces rise, it will bake as a whole loaf. Hope that helps you.

Pie Crust IV

My mother made the BEST pie crust I ever had. She passed the recipe down to me which she got from her mother. It's the same one. Only we have always doubled it. So our recipe is 3:1. In fact, I use my food processor when I make it. Pulse in the shortening (or lard as I use) and add ice cold water until it forms a ball. Easy Peasy!

Chewy Cinnamon Cookies

Very easy recipe. I used a cookie scoop and got almost 4 dozen. They do spread so be careful how many you bake at a time. But they were delicious and the house smells great when you're baking them. Added them to my Christmas cookie collection.

Buttermilk Chess Pie

This was the absolutely delicious! I made it for Father's Day and it was a huge hit. It is very rich so I was able to get 12 servings out of a deep dish pie. I will definitely make again!!

Brown Sugar Biscuits

I was anxious to try this recipe since I always make pinwheels with my left over pie crust and these sounded similar. They were excellent. Believe it or not, I was out of milk this morning but I did have buttermilk so I substituted that. And I noticed that I needed to add a little more buttermilk than the 2/3 cup that recipe called for in order to make a good dough. But I didn't measure it. Another 'glob' maybe? I'm so pleased to have a cinnamon roll recipe that didn't require yeast and proofing. Not sure why some people weren't happy with the results. I was and will definitely make again!! Thanks for sharing!!

I have been making this cake for years. I too 'cut corners' and mixed all of the ingredients together at times. Either way you make it you will not be disappointed!

Clams Italiano

If you're serving this as an appetizer 36 clams may be enough. But if you want this as a meal, make sure you increase the amount because they certainly won't last. The recipe is excellent. Try serving mussels this way (which I like even better than clams.) Thanks for sharing!

Easy Mexican Rice

Excellent recipe if you cook the rice in the tomatoes and sauce instead of just water. I decreased the water and used Ro-Tel tomatoes since my family likes things spicy. And I've used every bean imaginable for this dish, except the kidney bean. Just our preference. Very tasty and very easy.

Kathy's Roast and Vegetables

I just made this for dinner last night. I put it together before work in the crockpot and then about an hour before dinner I added the potatoes and carrots. I didn't 'follow' this recipe meaning this is already one of the ways I make a pot roast. I do thicken the gravy with a little cornstarch and water (on the stove.) My husband and sons are big 'meat and potatoes' kind of men and they loved it!
