Shrimp Scampi Bake

I gave this five stars because it's EASY and YUMMY. I make it exactly as the recipe states except I halve it. I serve it over spaghetti with grated Parmesan and salad . Dinner is done in under a half hour. My husband and our three picky little eaters love it. Great go to when Im pressed for time . I always keep a bag of raw shrimp on hand in the freezer for this or one of my other recipes. It defrosts in a snap. I did not find the Dijon over-powering as some others did (nor did my little ones). Rather, I found it zippy. I like the extra butter sauce to outvoted the pasta. Perfect as written. Thanks for this recipe !

Indian Fish Curry

This was so tasty! I followed the recipe exactly, using cod I bought frozen, then thawed out. I used 1/2 tsp red pepper and it was still too spicy for my kids, so I baked some of the marinated fish without the sauce in a foil packet and they liked that. My husband and I loved it made according to the recipe. Next time I may cut the red pepper back more so the kids can eat it with the curry sauce, though I would miss the spice!

Chocolate Chip Muffins

I followed the recipe exactly. I took them out of the oven at 15 minutes and they were dry and had a kind of hard crust on top as well as the sides and bottom. I would have given these two stars, but I'm giving them the benefit of the doubt, as I am not known for my culinary skills -- perhaps my oven runs hot? Side note: Two out of three kids, who normally love choc chip muffins, liked them.

Fast and Friendly Meatballs

I use this recipe regularly. Fast and easy. I now use it with ground Italian sausage, which I once bought by mistake. It's so flavorful. These meatballs actually brown in the oven and clean up is much easier than browning them on the stove top. Thanks for this recipe!

Crispy Rosemary Chicken and Fries

Easy and delicious. My little ones (2 and 3) even like it. I put the oven on convection for the last 15 min to help crisp and brown everything. This recipe is good for winging it -- use whatever herbs you have/like. It's also perfect the way it is!

Garlic Chicken

I love this recipe! It's easy and good. I make it once a week and even my 2 year old likes it. I make it to the letter with one small exception. I crush one large clove of garlic with the broad side of a large knife using the palm of my hand instead of measuring out two teaspoons. The skin of the garlic peels away easily -- very easy and effective. Tonight I will try it with half butter/half olive oil based on a recent review I read. I'll post the results.

Sausage & White Bean Soup

Fantastic! The prosciutto and the mashed beans give this soup the flavor and texture of a soup made from scratch and simmered day. I followed the recipe exactly with the exception of using fresh thyme instead of dried because I happened to have some on hand.
