Blackberry Cobbler II

It's way too sweet !!! I also doubled the dough, added cinnamon to dough mix and up the berries to about 6-7 cups. DO IT ! Otherwise, you will end up with too little everything except pools of juice inside a 9x13 Pyrex. The berries gave out a lot of liquid so next time I will add more cornstarch to thicken up the juices. Most important of all ~ use less sugar ! I would cut out 1/2 cup. Berries are sweet already ! I also baked 10 or more minutes longer since I increased the dough... Much better when its more done and golden brown on top.

Sweet Restaurant Slaw

I was trying to duplicate the cole slaw from a popular restaurant and I came across this recipe sounding the most like the flavors I was aiming for... This turned out really good and tangy. I diced the cabbage and carrots ( that was how the restaurant did it) Like the other review I also used rice wine vinegar cuz I had a lot on hand. I used chopped scallions not onions, added garlic powder, and lots black pepper. I used Hellman's lite mayo...I forgot the oil but it really doesn't need it, so save the extra fat and calories.... It was delicious.

Fresh Pineapple Upside Down Cake

It was very good ! I used the whole pineapple as directed, there was a lot, so I decided to put in a 9x13 Pyrex. I think if I had used a cake pan, the pineapples would stack too many layers, wouldn't look pretty like the photo shown. Even in 9x13 pan, I stacked pineapples 2 layers. When I made the batter it was not enough to spread completely to cover the whole thing ( I even used all 3 eggs, what's the point of leaving one yolk out ?) so I spread it very thin, not covering every inch. I would have to say, after it baked, the dough did raise a little so it looked fine...But, I did not dare to turn the pan upside down, we just cut out of the pan, and it was certainly delicious, definitely more pineapples then cake. We didn't mind that. The pineapples left juice at the bottom which was really good...note :It was not thicker and caramelized like I had imagined though. The 'cake' part was more like a firm crust, which was good. Overall it was very good and refreshing, not dense and heavy.

Delicious Ham and Potato Soup

This was so simple and delicious. I sauteed the veggies first, adding in fresh chopped garlic in a bit of olive oil first to release flavor in a large stock pot. Filled it with water and two no sodium chicken bouilon packets. I threw in leftover ham bone from Christmas, and chopped Canadian bacon, and the potatoes. simmered until all veggies are soft, then added in canned corn, and the butter flour milk mixture... Finished with lots fresh ground black pepper and it was so good, my kids loved it with Ritz crackers.

Best-Ever Texas Caviar

Great recipe, and perfect for a crowd as it makes a ton ! Not only good to scoop up with chips, it's a healthy side dish. I made turkey tacos and stuffed the tortilla with turkey, Mexican rice, Texas caviar, shredded cheese, and a dollop of sour cream. My boys loved it. I did add some cumin, paprika, dash chili powder, splash of fresh lime juice, and fresh black pepper as well to the recipe.

Andy's Spicy Green Chile Pork

I seasoned pork tenderloins with garlic powder, cumin, black pepper, and just a pinch of salt. Put in crock pot and dumped a jar of medium green salsa. Cooked for 8 hours and it was so delicious. It was flavorful, tangy, and tender. My four boys loved it over rice.

Home-Style Scalloped Potatoes

This is a great recipe. Simple clean ingredients, not masked by canned soups, precessed cheeses etc... Only thing I added was a bit of garlic powder which gave it some depth. I used white potatoes, because it is a firmer potato. I wanted to speed the baking process, so I did microwave the peeled whole potatoes in a micro safe bowl covered with water and cooked them half way through. I let it cool a bit and then sliced the potatoes and continue with the layering process, toped with sprinkling of 2% cheddar cheese, then baked it in half the time. It was really good !

Indian Tandoori Chicken

This was delicious, despite my changes.... My review is for those that likes to alter the recipe for whatever reason... Well first, I used turkey tenderloins ( just what I had in freezer), I didn't use any food coloring ( didn't want to add artificial stuff ), and I sauteed half in pan, and broiled the other half ( to compare the taste). My conclusions is...using turkey was just as tender ( I marinated for 24 hours), Flavor was great but didn't look authentic because no food coloring, I would use food coloring next time. Definitely try to grill it for the smokey flavor next time because sauteed version was good ( better than the broiled) because of the caramelization. But for true Tandoori flavor, grilled would be soooo much better. I will try it again.... Flavor was very good !

Mijo's Slow Cooker Shredded Beef

I thought this was a good recipe. Although instead of hot pepper sauce, and Jalapenos, I used one can of chiles in adodo sauce. It came out plenty spicy. I do have to agree that the dry spices were too many and complicated. I have found simply rub Mrs. Dash Southwest Chipotle Blend, along with garlic powder, salt and black pepper does the trick. Then keep the liquid ingredients the same or just dump in a jar of favorite salsa. Still add in your onion, bell pepper, and throw in some frersh garlic ! Easier and delicious !

Tres Leches (Milk Cake)

I thought this was very good, and very easy too. Followed recipe exactly, except used 2% milk. Definitely need to poke lots of holes, and allow time for the milk to soak into the cake, in the frig of course to keep the cake cold to prep for fresh whipped cream layer ( so heavenly ), I found that using super fine suger works better along to whip the heavy cream with. This is suppose to be a wet cake, so when you cut in, some milk is suppose to seeps out. That is why it is so good !

Korean Braised Short Ribs (Galbi Jjim)

This was really sumptuous ! The beef was so tender, and the flavor was just enough sweet and salty. I added 1 sweet potatoes as well, butternut squash would be good too :) One thing I did was I used few chunks of caneloupe, and few chunks for honey dew in replace of the pear and kiwi. Why not, it was leftover from a fruit salad. The substitution did not change flavor in the dish. The sauce was so good over rice. If you think it's not garlicky enough, then add some more garlic powder as I do to any dish anyways... and lots of cracked black pepper. YUM !!!

Bubba's Jambalaya

This was my first time making Jambalaya. It so so good ! I had only chicken broth to use, and I substituted crab meat for shrimp ( we prefer crab ) which I garnished each bowl along with the crumbled bacon right before serving. I think this made a beautiful presentation. Crabmeat stayed in tacked and bacon stayed crispy. I didn't use rice like traditional Jambalaya, instead I used Orzo because thay was what wanted to use up in my pantry. Actually, worked well because orzo stays in shape amongst all that stirring.

G's Flank Steak Marinade

Wow ! I marinated 7 Lbs. of flank steak in this marinade for almost 2 days for my Mexican themed dinner. It was fabulous ! Really... don't use anything but fresh garlic, onions and grated fresh ginger. Flavors are more pronounced, and makes a big difference. Everyone now wants the recipe !

Mexican Style Shredded Pork

I didn't have chipolte sauce on hand but I had chile in adobo sauce so I just used that. When I took the pork out to shred, I removed the whole chiles because I didn't want to be too crazy spicy for my kids. For those that like heat, this would be perfect for you, even with the chiles removed, it was still SPICY ! But good ! I didn't make rice with lime snd cilantro. Instead I used the squeezed lime juice on the finished shredded pork, and garnished with sprinkling of cilantro on top. My family actually ate mini slider style using dinner rolls. Flavors are great !

Slow Cooker Chicken Stroganoff

This is pretty good, but I have to agree on the saltiness of the dish. Next time I will use low sodium condensed soup, and if they make a low sodium dressing mix that would be good too. I added 1/2 c of white wine and about 1 can of water. threw some carrots in too. Toward the end I mixed in low fat cream cheese, couple handfuls of frozen peas for color, and couple of dashes of cracked black pepper. My family ate it over rice because I didn't have egg noodles on hand. We enjoyed it.

Chili-Lime Chicken Kabobs

Just made this for Memorial Day BBQ. I used both lime and lemon juice because I quadrupled the recipe and I didn't have enough limes. I marinated the chicken chunks over night then skewered them the next morning with pineapple chunks, red onion, red and orange bell peppers. These grilled kababs were soooo good !

Caldo de Res (Mexican Beef Soup)

I love this soup ! It tastes like the 'Cadillo soup' from my favorite Tex Mex restaurant. So flavorful and delicious ! I topped the soup with crumbled tortilla chips, and my boys loved it ! I didn't use Chayote. Instead I substituted with zucchinis.

Get a Husband Brunswick Stew

This was a great meal for a cold winter night, or nights...This recipe makes alot and plenty to freeze for later. Very kids friendly as well. My 4 boys loved it. I didn't use ground pork because I thought the ground beef was plenty, instead I diced some leftover Canadian Bacon and tossed in toward the end along with the cream style corn. I also added in Cannelli beans because my family likes beans. I think butter beans would of been great in this as well. I served this stew with crusty french baguette and a salad.

Cantonese Barbecued Pork

I grew up eating this, and I thought for a homemade version it was pretty good. Color is not the red vibrant color I am used to, so I did add a bit of food coloring in my marinade to brighten it up. It did come out much more like the real deal. Think I may cut back on the cinnamon a tad next time I make it though. Meat was very tender, thanks to the overnite marinating method.

Boilermaker Tailgate Chili

The flavors were deep and rich, I didn't use sausage because I didn't have any, so I used 1 lb. of bacon instead. There were alot of ingredients but that's what gives the chili the layers of flavors. I used one can of cannellini beans in place of a can of chili beans because we like a mixture of different beans. Served with shredded cheddar, sour cream, chopped scallions and tostido chips for dipping...YUM !
