Vanilla - Chocolate Powdered Sugar Frosting

This is the best frosting recipe I've found! I didn't have to change anything and loved the light chocolate color and flavor. As a cake decorator this is the recipe I will use in both vanilla and chocolate versions for future projects. Definitely double (or triple) the recipe if you're frosting and filling a cake but as is it will frost a dozen cupcakes. EVERYONE who's had this from me has commented on how good it is and/or asked for the recipe.

Chocolate Frosting I

This wasn't at all what I was looking for-- it was a thick chocolate mess almost like ganache but not as smooth or sweet. I had to add twice as much sugar, a tablespoon of milk and a teaspoon of vanilla to make it usable. The only reason I gave it 2 stars is because I'm sure there are other people who are looking for a very unsweet, straight chocolate icing. I just made a bad recipe choice based on the simple ingredient list and directions. (I was looking for "vanilla-chocolate powdered sugar frosting", which I HIGHLY recommend) I MIGHT use this one SPARINGLY (spread thinly) either between cookie sandwiches or on top of them but never on a cake.

Grandma's Chocolate Marvel Cake

This is a VIRTUALLY fat-free chocolate cake that is very moist and tastes like a boxed-mix (in a good way). I find the powder sugar "melts" on top, so don't sift it over the top until just before serving. If I'm using this for a birthday party, I use the Vanilla-Chocolate frosting for it and people can't tell that it's low-fat! You can also put the whole egg in but that changes the nutritional info (as does the real frosting). Don't tell finicky eaters about the prunes though, they'll reject it on principle. As for the 1-star reviewer whose boyfriend threw it out-- she HAD to have done something like make her own puree, reduce the amount of coffee or cocoa because you cannot taste the prunes if it's made CORRECTLY.

Six Can Chicken Tortilla Soup

This was super simple and ready in 15 minutes! I used frozen fire-roasted corn (Trader Joes) instead of canned and topped it with sour cream and diced avocados.

Broiled Tilapia Parmesan

My family couldn't get enough of this, including my two kids, 3 & 5. I made it another time with salmon- I was out of dried basil so I used prepared pesto and it worked out great.

Sugar Cookie Icing

This is a great EDIBLE icing recipe. As with all "royal icings" its very finicky about exact measurements along with temp and humidity levels where you're making it. I like that it tasted good even after drying.

Marinated Barbequed Vegetables

I used this as a base recipe adding white balsamic vinegar and Italian seasoning to the marinade. I had to double the recipe for the amount of vegetables. I think the key was the recipe said SMALL eggplant and SMALL peppers.

Chocolate Glaze II

This was delicious! I melted the butter almost completely to provide smoother mixing and also used 2Tbsp butter to give it more creaminess, 4 Tbsp Kahlua and 1 1/2Tbsp milk for the right taste/texture. I also added a pinch of salt (no more than 1/4tsp). HEATING the milk first will help with blending and create a very smooth glaze. I would have cut this recipe in HALF to drizzle a bundt like in the pic. I had enough frosting to coat the entire cake. (like that's a bad thing??)
