Simple White Cake

Reviewed: May 21, 2012
I was really nervous trying this recipe for the first time for a friend's birthday but it came out great. White and yellow cakes do tend to have that cornbread texture sometimes, but this one did not. I looked at many users' comments and came up with the following adjustments: I doubled the recipe to make a two-layer cake. I used 1 tablespoon of vanilla bean paste and 1/2 tablespoon vanilla extract. I also added an extra 1/4 cup of milk to the batter. I'm not sure if this is what really helped, but I beat the batter for a long time at every step before adding the flour (once you add the flour, only mix until the ingredients are combined). The cake was delicious, and although I over baked it a little bit (watch it carefully because it will go from under-cooked to over-browned very quickly!), it still turned out great. I will definitely be using this recipe again. Next time I'd like to try making cupcakes with it.

Fluffy Hot Chocolate

Reviewed: Jan. 13, 2012
This is delicious! I halved the recipe to test before I made a full batch, but everyone loved it enough that I should've made a full one! Two changes I made: Cut out the sugar and instead added more marshmallows, and added a handful of semi-sweet chocolate chips. You may like these changes if you like your hot chocolate less sweet. I'm sure I'll make this again.

Alfredo Sauce

Reviewed: Dec. 24, 2010
I'm sure this is delicious as is, but I made two minor adjustments. First, I used half heavy cream and half half&half instead of all heavy cream. Second, I only used 1 cup of Parmesan and for the other 1/2 cup of cheese I used Pecorino Romano. Otherwise I kept the recipe the same. This sauce is DELICIOUS!! It's sitting on the counter right now waiting for the rest of dinner to be ready, and it's actually a little thick so I might thin it out with a little bit of milk. The thickness of the sauce and it's great flavor made me think of making spinach and artichoke dip with it next time I make it...we already wiped the pot clean from dipping bread in there after I poured the sauce into a bowl.

Cookie Balls

Reviewed: May 18, 2010
These were super easy to make and everyone loved them. They actually would have been even easier to make if I wasn't at school and I actually had a blender, but that just shows the versatility of this recipe. I made these twice in one week, using white chocolate chips for the coating the second time because I couldn't find anymore almond bark/candy coating at the store. Easy, relatively inexpensive, pretty-looking crowd favorite...make these!

Simple Syrup

Reviewed: Jan. 19, 2010
So quick, so easy, and so affordable. I hate the grittyness that sugar can leave behind in cold drinks and simple syrup is the perfect remedy to that problem. I always knew it was easy to make but for some reason I had never tried it before now. With a 1-1 ratio of sugar to water, the ingredients are easy to remember as well! I added a half teaspoon of pure vanilla extract to a half batch of this syrup and used a teaspoon of it in my cold-brewed iced coffee. Delicious!

Baked Chicken Nuggets

Reviewed: Jan. 17, 2010
These are really really good. I'm sure these would be just as delicious if I followed the recipe exactly, but I made some changes to fit what I had on hand and to make them just a little bit healthier. I followed several other reviewers' suggestions. In place of the butter, I used a half cup of 2% milk mixed with a half tablespoon of lemon juice stirred in and left to sit for about 10 minutes. For the crumb mixture, I used half regular breadcrumbs and half Panko to make them extra crispy. I also replaced the Parmesan with sharp white cheddar just because I was running low on Parmesan, but I really liked the taste anyway. I double breaded the last 10 or so nuggets because I had a bit of breading left over. I tried two methods of cooking: Baking the nuggets on a wire rack on top of a cookie sheet lined with foil, and baking them directly on a foil-lined cookie sheet and then broiling the nuggets on low for the last two minutes of cook time. Both ways produced crispy nuggets, but I think the ones baked on the wire rack were just a bit more crisp. This recipe can be part of a healthy, well balanced meal, and best of all it is super delicious. I will make these again!

French Baguettes

Reviewed: Jan. 13, 2010
These baguettes were wonderful. I didn't expect them to be classically french looking or tasting (which they weren't exactly) but they were very close, and very good. I didn't use a bread machine for this recipe. Instead, I mixed the yeast, water, and sugar together and let that proof for a few minutes on the counter. I added the bread flour once the yeast mixture was foamy, and continued to knead. The dough seemed a little dry but ultimately came together. Another reviewer suggested adding the salt after the first rise, which I intended to do, but forgot! Oops! So I had salt-less bread, but it was still delicious nonetheless. I will definitely make this recipe again, and next time, I'm sure it will be even better if I don't forget the salt!

Unbelievable Rolls

Reviewed: Dec. 27, 2009
These rolls were edible, but I really did not like the taste at all. They were a little too dense for my liking as well. I'm glad I tried them once but I'll try a different roll recipe next time; I won't be making these again.

Omelet Biscuit Cups

Reviewed: Dec. 20, 2009
Very versatile and portable dish, I love the idea to freeze them and then reheat! The only problem I had is that the biscuit dough I used rose too much, but next time I will put less dough in each cup. Thanks for sharing this tasty recipe!

J.P.'s Big Daddy Biscuits

Reviewed: Aug. 5, 2009
Fluffy, easy, delicious. Two things to note: keep your butter cold, and only add as much milk as you need to bring your dough together. I added almost the entire cup and my dough ended up a little too moist. I got it back to a workable moisture level but it would have been easier if I had just added the milk more slowly from the beginning. Also, I had a little bit of dough left over so I made a mini batch of monkey bread. It was FANTASTIC with this recipe! I'm going to make this again tomorrow and perhaps add a splash of vanilla to the dough for a new batch of monkey bread. Yum!

Creamy Cheesy Scrambled Eggs with Basil

Reviewed: Jul. 25, 2009
Mmmm this was a quick and easy breakfast. The only thing I added was a sprinkle of sharp cheddar cheese on top, just because I like the bite. I think this would be great to serve for breakfast or brunch if you're having people over...it's fresh, quick, can easily be made in large quantities if you multiply the recipe, and the basil adds an unexpected twist that makes this dish seem a little more "gourmet" than regular old scrambled eggs. Thanks timbertiger!

Tomato Basil Penne Pasta

Reviewed: Jul. 23, 2009
So delicious and very versatile! I made this last night for dinner modifying it to fit what I had on hand. I had tons of fresh basil, a half a pint of grape tomatoes, and 5 pounds of mozzarella on hand left over from a charity event we made baked ziti for. Since I only had half the amount of tomatoes called for, I added an 8 oz. can of tomato sauce I found in the pantry, and loaded the sauce up with fresh basil instead of just adding it at the end. I used two cups of mozzarella in place of the pepper jack and served this over ravioli instead of penne. Usually I stick to a recipe the first time I make it but I wanted a quick dinner using ingredients I already had, so I changed this a little bit and it came out great. Definitely try this recipe, and don't be afraid of doing a little experimentation. I will be certainly be making this again. Next time I'm going to try the recipe exactly as written, but I'm sure it's great either way!

Pesto

Reviewed: Jul. 22, 2009
My family and I really liked this pesto. I had leftover breaded chicken cutlets that I had seasoned with basil and some Italian herbs the night before, so I cut them into strips, made some linguine, and tossed everything together for an easy, delicious dinner. My only changes to the pesto recipe were to toast the pine nuts (watch them carefully and start on a low to medium heat so they don't burn!) and to add some salt. I also used a tad less garlic and parsley. Just taste as you go and adjust proportions accordingly. I will probably try other recipes for pesto in the future, just because I haven't made many different ones, but this is definitely a good starting point.

Felix K.'s 'Don't even try to say these aren't the best you've ever eaten, because they are' Chocolate Chip Cookies

Reviewed: Jul. 17, 2009
Really good! They may not be the best chocolate chip cookies I've ever had but I don't think they should loose a star for that because they were excellent. Great flavor, not overly sweet, crisp edges with a chewy middle...just all around a very tasty cookie. This is the best chocolate chip cookie recipe I've tried so far from this site. Make these!

Award Winning Soft Chocolate Chip Cookies

Reviewed: Jul. 16, 2009
Very good cookies. They were indeed soft which was a big plus. They did come out a tad bit cakey, but everyone who tried them loved them up anyway. This isn't my favorite chocolate chip cookie recipe, but I may make it again in the future. You should definitely try this at least once!

Buttermilk Pancakes II

Reviewed: May 31, 2009
So tasty! These pancakes are very fluffy and airy, and have a delicious flavor. I made the recipe according to the directions but I did cut it down to 4 servings which was enough for the group I was serving. The only addition I made was to add a little bit of pure vanilla extract to the batter. I will be making these again.

Soft Oatmeal Cookies

Reviewed: Mar. 20, 2009
YUM, I will make this recipe again and again. The chewy cookies baked up perfectly with nice crispy edges. The cinnamon gives them a mellow flavor that's super tasty but not overpowering. I didn't change a thing about the ingredients but I did make the first batch without refrigerating the dough and they came out fine. I'm going to make the rest tomorrow to see if there's a noticeable difference but either way, these were delicious!
