Tuna Noodle Casserole from Scratch

This is the best by far! I have been looking for a good all in one recipe since I'm not using canned soups anymore. I have been making my own cream soup but this one is better! If I don't have mushrooms, I use more celery, and sometimes I've used canned peas. I also use crushed lays potato chips on top if we have those too. This recipe is awesome and remind me why I love tuna casserole!!

Pork and Pepper Stir Fry

I used this recipe mainly for the marinade and reminding me to use chile paste. The meat was very tender but I did keep it in the marinade overnight and the next full day. I added lots of veggies and it was great!

Savory Italian Sausage Sauce

Even with some necessary empty pantry creative ingredient substitutions; this sauce was amazing! I doubled the batch but used only 1 1b of sausage. I also used sweet yellow onions in lieu of green onions, only one can of stewed tomatoes, 3 cans of paste, 1 of sauce, 1 tbsp of red wine vinegar with remaining water to replace 1/2 cup of red wine. I also didn't add all the sugar, I may try it with all of it next time just to see what changes but it seems like quit a bit. Maybe me substituting the paste vs sauce and stewed adjusts the sweetness of the sauce. It was excellent. We really enjoyed it!!

Pan de Muertos (Mexican Bread of the Dead)

I'm not sure if I did something wrong. I followed the recipe exactly, but the bread was very dry and not enjoyable. Smelled great while cooking and the blend of tastes was interesting, just to dry for my family. Everyone tried it then left it alone. :o(

I think this dish would be better with a fuller flavor piece of chicken. My chicken breasts didn't really absorb much flavor from the sauce. We will probably make it again but with thighs.

Potato and Bean Enchiladas

This is a good starter recipe. Needs more spice though and is a bit labor intensive, but it's worth it. Easily makes 2 9x13 pans full of enchiladas which are very filling. Next time I may add green chili to the sauce or jalapenos.

Grilled Brown Sugar Pork Chops

These were interesting but I think we will be either excluding the ginger and giving it another try or dropping it all together. None of my 5 family members were crazy about the mix of flavors, although we enjoyed the apple and sugar flavor. Not sure on this one.

Delicious Black Bean Burritos

These are awesome. Could use more jalapeno if you want spicy. The current amount adds no heat at all, just flavor. Don't skip the cilantro! It's the perfect finish to the cheese and bean combo.

Smothered Mexican Lasagna

Just awesome! Didn't change anything. Meat took awhile to simmer down but nothing a slotted spoon couldn't fix once we started making the layers. Definitely adding into rotation.

Anniversary Chicken I

My family ate this up so fast!! They even mentioned that this was the best recipe I've gotten off this website! I've been trying recipes from allrecipes.com for about 9 months so I think that should tell you how awesome it is! I used a 3 thighs to finish up some frozen meat I had left and 3 breasts. Defrosted and I lightly browned the chicken using my Foreman grill. I used Yoshida original gourmet marinade drizzled on the bottom of the baking dish and then spooned over the top then hidden valley ranch and bacon bits from costco. AWESOME!!

Satay Chicken Pizza

Started following this exactly except almost doubled, but browning the chicken to a nice brown took alot longer than I anticipated and I decided to add a bunch of green onion to the meat. Turned out to add nice flavor. Made them on larger pitas instead of the mini 4" ones. Full size pitas turned out like personal pan size :) I think it really matters what kind of peanut sauce you use. I was not pleased with mine but it still tasted good and even better the next day!! Careful, this dish is fairly filling. I fed 3 men with it and each finished theirs later in the evening/lunch the next day.
