Carrot Cake
Absolutely the BEST Carrot Cake that I have ever had!!! I couldn't find 15oz cans of pineapple, so I used 20oz. I also baked it in a jelly roll pan. After it cooled, I cut it in half to make a layer cake. It also made 12 cupcakes. Because I was making a layer cake, I made 1 1/2 recipes of frosting. Perfect!!!

Easy Chocolate Cake
This cake was great, however, I cannot give it 5 stars due to incorrect instructions. The evaporated milk and cocoa powder should be cooked at low heat, so that the cocoa will dissolve without burning the milk. The frosting should be cooked at low while the cocoa powder dissolves, but then turned to medium high so that it will boil and then thicken. I stirred the frosting for about 1/2 hour before I just turned it up. I should have done that about 25 minutes before that.

Broccoli Rice Casserole
I'm only giving this recipe 4 stars because I changed a lot of it - because of what I had in the pantry. I used 3 cups brown rice (uncooked). I didn't have any cream of mushroom soup, so I used 1 can cream of chicken and 1 can cream of celery. I also didn't have any velveeta, so I used a can of nacho chz soup, added some shredded cheddar and the water. I added a can of sliced mushrooms (didn't drain) and a 13oz can of chicken (not drained). I didn't cook the broccoli, just defrosted it in water in the microwave and then drained it because we like it crisp. I left out the celery and onion all together. After about 35 min. in the oven, I topped it with more shredded cheddar and some french fried onions. It made a ton - close to 2 full 9x13's. It was awesome!
