Parmesan Roasted Acorn Squash
I don't write a lot of reviews and I have been on allrecipes for years. However, I HAD to rate this because my husband hates squash but he absolutely loved this! At one point he even said he couldn't believe he was actually eating squash! I followed the recipe as stated, except I don't own a jelly-roll pan, so I baked them on a cookie sheet lined (shiny side up) with heavy duty tin-foil and sprayed a generous amount of PAM cooking spray. (Emphasis on the "PAM" because I have found that off brand doesn't work as well for me.) I also didn't have any fresh thyme. So I just used a tsp or two of dried. The amount of salt, pepper, and parm was perfect. Baked 15 minutes on one side, flipped them over and baked them another 15 minutes. SO delicious.

Jalapeno Rosemary Alfredo
My husband and I just finished eating this. I followed the recipe exactly. It actually wasn't spicy at all. We are guessing the cream and parmesan must have balanced out the spiciness of the jalapeno. The only changes I will make next time is adding another jalapeno and an extra half clove of garlic. One jalapeno simply wasn't enough to give this sauce the boost of flavor it needed. I served it on linguini and topped it blackened chicken - you can see my photo at the top of the page. You may need to flip through the photos in case it has been replaced by another person's photo.

Ultimate Pasta
I don't write a lot of reviews, but I wanted to give a shout out to this recipe! I made this the other night for dinner, and had the leftovers today for lunch. As a general rule, I don't make any changes to the given recipe unless the reviews were pretty bad. The only changes I made were subbing fettuccine noodles in for the egg noodles (we were out of egg noodles) and using Campbells Cream of Mushroom with Roasted Garlic in place of the regular cream of mushroom and the 1tsp of garlic (we didn't have any regular cream of mushroom on hand). I used Velveeta 2% for the "processed cheese cubes." It was EXCELLENT! I was afraid of it being bland for the lack of ingredients, especially no veggies or meat. But it was so good we will definitely be making it again and again. Even my husband who thinks 'anything without meat isn't a meal' loved it and asked for it again this week! I do think we will always use Campbell's Cream of Mushroom with Roasted Garlic in place of the regular CofMushroom & 1tsp of garlic - Just because it's one less step and it tasted great.
