Chicken Enchiladas Supreme

Reviewed: May 4, 2011
I don't know why there was such a negative review about this dish...just a matter of taste, I guess. I used the sante fe philly cooking creme to spice it up a bit. It may have spiced it up too much as my little ones loved it, but they could not finish it because it was too hot for them. But my husband, older child and I could not get enough! It was SO good. I was surprised that it was this yummy. I will be making this again and again!

Cream Cheese Penguins

Reviewed: Nov. 26, 2007
These were a great conversation piece, easy to make, and allowed my 8 year old to take some credit. I did the cutting, but had her assemble the rest, and she enjoyed everyone's comments. They are just adorable and very yummy! They were a big hit and I will make again and again...anytime the occasion calls for it!

Slow Cooker Mashed Potatoes

Reviewed: Nov. 26, 2007
These were delicious, but the best part was I threw them in the crock pot and forgot about them! They tasted every bit as good as my famous garlic mashed potatoes, but 10 times easier to make. I wish I could give this a 10!

Artichoke Chicken

Reviewed: Jun. 3, 2008
This was scrumptious and so easy! I did add some of my favorite spices to the chicken before topping it with the artichoke mixture, though.

Amazing Pork Tenderloin in the Slow Cooker

Reviewed: May 21, 2008
This is a definite keeper! I made it for Mother's Day dinner with my extended family. Everyone raved over it. It was so tender, and if you add a little corn starch to the broth and bring it to a boil, you got yourself a nice gravy for the meat and side dishes!

Double Chocolate Brownie Cake

Reviewed: Nov. 26, 2007
This was so yummy it was ridiculous. Everyone loved it. I smothered it in a chocolate chocolate chip frosting. One of my guests called the next day and said she wishes she had taken me up on sending a piece home with her. She found herself craving the cake in the middle of the night!

Catherine's Spicy Chicken Soup

Reviewed: Dec. 27, 2007
I try and make every recipe from this site as written and don't pay too much attention to the reviews of those that change the original. I am so glad I stuck to that this time as well. I can't imagine improving on this delicious soup! This was simply delectable. My husband and I both agree that not only is this a "keeper", but it's going in heavy rotation around here from now on. It's also very healthy, especially if you use a light sour cream. We like to eat healthy and it's hard to find delicious AND healthy sometimes. Thanks so much for this welcomed addition to our recipe book!

Bacon Cheese Muffins

Reviewed: Dec. 27, 2007
These muffins went perfectly with the soup I made tonight. They were hearty, but not so rich that it overpowered the meal. It was a nice accompaniment to the robust flavors of the soup I made this evening. These muffins made a great meal the perfect meal. They were also completely convenient and easy to make!

Portuguese Chicken I

Reviewed: Dec. 2, 2007
This was awesome, and I bet it's going to taste even better as leftover lunch tomorrow. I put it over brown rice and black beans, with a side dish of wax beans. My husband liked it and said he would eat this again if I made it. The baby loved it!

Corned Beef Bagel Dip

Flaky Dill Biscuits

Reviewed: Dec. 12, 2007
Although these were just a tad heavy on the dill for my taste, I'm still giving them 5 stars because that can be easily adjusted. Plus, something this easy and this delicious shouldn't be punished! I have never made biscuits before and thought it would be a daunting task, but this was a total surprise. I can't wait to make these again!

The Captain's Famous Jambalaya

Reviewed: Dec. 15, 2007
Even though I was the only one in my house who could handle the heat of this, I'm still going to give it five stars. The heat can be controlled next time I make it if I wish to do so. This was so good. I couldn't believe how easy it was to make and how great the results were. I've never made any kind of cajun food before, so I thought it would be a challenge. It wasn't at all. The taste was restaurant quality. I will definitely make this over and over again! YUMMY!

Cajun Chicken Pasta

Reviewed: Apr. 28, 2008
This was FANTASTIC! I'm definitely keeping this recipe around. I had to triple the recipe, and I think 3 cups of heavy cream is too much for the dish, so next time I'll go lighter on the cream. Still, this was a very tasty dish that I plan on putting in my rotation!

Risotto with Sun-Dried Tomatoes and Mozzarella

FABULOUS! I used brown rice to make it a bit healthier since it calls for so much cheese, but it was still delish!

Poor Man's Caviar

Reviewed: Feb. 15, 2008
I will definitely be keeping this recipe. It is SO flavorful, and the best part is it is so good for you! I can't wait to make a big batch of this and reach for it instead of a bowl of chips. Very good recipe to have in your pocket if you're trying to eat better and not sacrifice the taste. Awesome!

Grandma's Green Bean Casserole

Reviewed: Nov. 26, 2007
I always make the traditional green bean casserole for everyone every Thanksgiving. I rarely eat it myself because I find it bland and boring. This knocked my socks off! Everyone loved it, and I was happy to have the leftovers this year! I have finally finished it off, and it was wonderful. I will make this every year, and any time I have a potluck or occasion to go to that calls for this delicious spin on an old favorite! AWESOME!
