Black Bean Tortilla Casserole

My family and I liked this a lot. I added more salsa initially and more cheese during the baking process, but other than that, I pretty much followed the recipe. Once you get the prep and all the chopping out of the way, this is a very easy dish to make. Will definitely make again.

Broiled Grapefruit

This was a nice change of pace as a one-time novelty kind of side dish, but it's too time consuming to make again. It has an interesting taste, reminiscent of spiced baked apples and was a nice change from the normal fare.

Avocado Side Dish

Although this was interesting and extremely healthy, it wasn't a total hit. I love avocado, so this left me somewhat satisfied, but did little for anyone else. Also, it was a lot of chopping and effort for something that I could only give 3 stars.

Caribbean White Beans

For all the chopping and the amount of time, these were not worth it. My 8 year old liked them more than the adults did. On the plus side, it is pretty healthy.

Chicken Pot Pie IV

Awesome Broccoli-Cheese Casserole

This was easy to make, but pretty mediocre taste-wise. I liked it more than everyone else did. Probably will keep searching for that "perfect" broccoli casserole recipe.

Peanut Butter Spread

For me, this was just gloeified peanut butter. I'm not sure what I expected other than just to satisfy my curiosity, and I don't know what I'd put it on that I wouldn't put just regular peanut butter on. I won't be making it again, simply because I like regular peanut butter enough to put it on apples, bread, ice cream, etc. It tasted just fine, but I'd rather use regular peanut butter.

Orange Sour Cream Muffins

These muffins were tasty, although I would like a little more than a hint of orange flavor that this recipe provided. Next time I will add more orange. They were very nice and moist though, and I will most definitely be making these again.

Beef and Potato Nacho Casserole

This initially looked pretty good and then I started to make it and feared that it would turn out to be a glorified hamburger helper type dish. It was. If you're 12 and under, this will be a hit. Otherwise, make something else for dinner.

Bacon Cheese Muffins

These muffins went perfectly with the soup I made tonight. They were hearty, but not so rich that it overpowered the meal. It was a nice accompaniment to the robust flavors of the soup I made this evening. These muffins made a great meal the perfect meal. They were also completely convenient and easy to make!

Catherine's Spicy Chicken Soup

I try and make every recipe from this site as written and don't pay too much attention to the reviews of those that change the original. I am so glad I stuck to that this time as well. I can't imagine improving on this delicious soup! This was simply delectable. My husband and I both agree that not only is this a "keeper", but it's going in heavy rotation around here from now on. It's also very healthy, especially if you use a light sour cream. We like to eat healthy and it's hard to find delicious AND healthy sometimes. Thanks so much for this welcomed addition to our recipe book!

No Bake Peanut Butter Pie

I followed the recipe, but still did not get the consistancy I thought this would have. It was much more runny and less thick and fluffy than I thought it would be. No one ate this, and I ended up throwing it out.

Slow Cooker Beef Stroganoff I

I gave this a four for the convenience, but it was really only a three for taste. I had to doctor it a little to make it work for my husband and I. I will keep this recipe in my back pocket, but will still continue to search for the "perfect" stroganoff recipe.

Dip For The Stars

In the recipe's defense, I think this one was my fault. The butter did not blend well at all, but I think maybe I have a problem with my blender. No one liked this at my house. I think the feta was too overpowering for them with all the other strong flavors in the recipe. I don't think I will make this again, but it sounded really good!

Beef and Tomato Pie

This was pretty good and basic. It's really hard to go wrong with these ingredients. Just to perk this up, I added a layer of mashed potatoes to the bottom and next time I think we're going to incorporate veggies as well. This is a definite kid pleaser too!

Enchilada Stack

I'm giving this a four because it is really just a microwave version of an enchilada casserole, and the baked version is better. BUT, my kids LOVED it! This is not something I'd make for my husband or myself, but would fix in a flash if I needed to throw something together for the kids. It's good for them as it's rather bland, so there are no strong or offensive flavors for a young palate. However, I wouldn't make it for myself or for company. Good kid recipe.
