Lemon Blueberry Bread

Delicious!! I added a few more fresh blueberries. I also use fresh lemon juice and lemon peel, I really think that makes a difference. The bread had a dense texture with loads of blueberries and walnuts. Very good. I have made this recipe several times for different functions and there are never any leftovers.

Baby Spinach 'n Bacon Salad

I didn't care much for this salad. I found the recipe to be boring. I added more vegetables, red peppers, tomatoes, cucumbers for variety. The dressing was OK, if I make it again, I would cut down on the mustard a bit.

Light Sloppy Joes

This was good, although I have had better. It was quick and easy to make and I too added a touch of barbecue sauce which added some much needed zing. I also topped with shredded cheddar.

Baked Apple Pudding

Excellent! I substituted Splenda for the 1 cup sugar, and added a touch more cinnamon. Very moist and Yummy. I served it with nonfat frozen yogurt, so by the time I was done with this recipe, it was low-fat and sugar-free.

New Waldorf Salad

Wonderful salad!! I added about 1/2 cup of chopped celery to make it a bit more like the traditional salad. The citrus dressing added such a nice fresh flavor. I will definitely make this again.

Downeast Maine Pumpkin Bread

I have never made a pumpkin bread that was as good as this was. I also used 1/2 applesauce for the oil and 1 cup brown sugar, and it was simply delicious. I added some chopped walnuts and raisins. My loaf pans must have been a little larger that this recipe uses because it only made 2 loaves. Will absolutely make this again

Slow-Cooked Pork Barbecue

I was a bit apprehensive making this recipe, it was just too easy. It was marvelous, the barbecue sauce mixed with the cola was a great pair. This recipe makes quite a bit, so it can definitely be frozen for use at another time. I will absolutely make this again.
