Mock Coconut Pie (Spaghetti Squash Pie)

Loved this! I probably could have eaten half the pie myself tonite... and I may yet! Definitely use less sugar - it was very sweet. I didn't have nutmeg so I used pumpkin pie spice instead. It was delicious! It has sort of a custard-y taste. I also did not use a crust, just buttered a pie dish and it worked just fine.

Zucchini Brownies

Awesome and decadent! The first time I made these I used 1/2 coconut oil instead of veg oil. The batter was very dry - I was a bit worried and I kinda patted the dough into the pan. But don't let that worry you. They were so moist and rich. We ate the whole pan in one day! The 2nd time I tried to lighten them using 1/4 cup oil and 1/4 cup applesauce. The dough was more wet this time. They were still wonderfully moist and rich, but without the oil left on your fingertips. This is THE ONE! Make these!

Cioccolata Calda (Hot Chocolate Italian-Style)

I added 3 tabls of sugar and a capfull of whipped cream vodka and a little vanilla. We both thought it was a decadent cup of hot chocolate! Easy way to drink your dessert!

Pumpkin Zucchini Bread

Awesome bread! Moist and delicious! I did substitute half the butter with applesauce and used a bit less sugar. I also used half brown sugar, half white sugar and doubled the zucchini. Definitely a keeper!

Cabbage Cakes

Loved these! I added alot more salt though after trying the first batch. I also traded 1 cup of rye flour for all purpose. I also included shredded carrots. Comfort food.

Chocolate Pudding Cake III

Wonderful! I also only used 1/2 cup white sugar and 1/2 cup brown sugar, and used milk instead of water. I overcooked slightly the first time because I was worried it wasn't cooked enough, but it does continue to cook once out of the oven and will dry up the "pudding" if you overcook.

Eggnog Cookies I

Pretty good cookies, I did use 2x as much eggnog and did the sugar 1/2 brown 1/2 white. Tasty and different. Mine stayed soft - maybe should have cooked longer so they would get crispier. But still enjoyed them for something different.

Chocolate Oat Snack Cake

Simple and quick moist cake! Love that oats are in it - lends a healthy "feel". I topped it with whipped cream. Yummy! I did lessen by 1/2 cup sugar and it was still plenty sweet.

No Bake Chocolate Oat Bars

Very good. I did only use 3/4 cup butter. And also substituted flax seed and frosted flakes for 1 cup of oatmeal. And then spread a 1/3 chocolate chips over bottom layer before adding melted mix.

Crackers a la Yvette

Loved these. I took the advice of others and only used about 1/2 cup of oil. I used 3 different types, canola, grapeseed and safflower. Very tasty and addicting! I'll add more chili flakes next time. I had no packets of dry salad dressing so I just added onion salt, garlic powder and italian herbs. Wonderful!

Paul's Pumpkin Bars

They were excellent. I did make the changes many noted - including using a 29 oz can of pumpkin and adding a tsp of pumpkin pie spice and only 3 eggs. It does puff up like a cake - I think next time I'll use less baking powder. I didn't have a jelly roll pan, so I used two 8x8 pans. For the frosting I used 6oz of cream cheese. Will make again!

Chocolate Crinkles II

Excellent! I used the suggestions and made some rolled in regular sugar with a hershey kiss mint truffle in the middle after cooking. VERY GOOD! Also made some the regular way and put chocolate chips in them. Excellent either way!

Spinach Brownies

These are very good!! I did saute the onion and I used canned spinach (drain the water). Also used a combo of cheeses and went a little lighter on the butter. They turned out so yummy! I'll definitely make this again.
