Water Chestnut Wraparounds

I've made these several times and they are always a success. My mom used to make rumake (which we loved) but I think I like this just as much without the liver.

Special Butterscotch Chip Cookies in a Jar

For some reason our cookies spread over the whole pan, making lacy, crunchy cookies. We loved them! A perfect combination. You only occasionally get a hint of the coconut, and the butterscotch chips are awesome. Very easy, and a nice gift.

Blueberry Zucchini Bread

Great zucchini bread recipe! I've used this recipe exclusively since I found it. If I don't have blueberries, I add an extra 2 cups of zucchini. I also added frozen raspberries last time I made it and it turned out awesome! I usually bake this in two regular bread pans rather than the mini-loaf pans.

Tortilla Soup II

Very good recipe! I loved the flour tortillas. I will probably double the recipe next time. It JUST fed our family of 4. It was a touch spicy for the kids. Make sure to season with a little salt and pepper too. I would not load up with the tortilla strips. They get soggy fast. While they have a good flavor, even after soaking, I would recommend that you put a few on the soup and then have a bowl on the table to resupply as needed. Thanks for the great recipe!

Breakfast Upside Down Cake

I've made this for dinner several times and love it! I didn't have parchment paper, so the first time I used wax paper. It stuck pretty good. The second time I reversed the bacon and cheese layers (put the bacon 1st, then the cheese). Then I served it without the upside down process. Much easier that way.

Stuffy

This was a brilliant way to use Thanksgiving leftovers. I didn't have any gravy left, so I mixed the turkey with mayo first and then mixed in the stuffing. I added cheese to the top as well so it made it a kind of melt.

Rosemary Ranch Chicken Kabobs

This is so easy. The marinade makes the chicken very tender. It's always a hit with company! I also add the veggies to the marinade as recommended by others which makes a huge difference.

Vegan Hot and Sour Soup

Awesome recipe! I love hot and sour soup but have had a hard time finding a recipe that matches the restaurant soup. I didn't use the specified amount of mushrooms as it seemed excessive, and I adjusted the seasonings at the end to fit my taste. Very happy with the results.

Honey Baked Chicken II

This was very good. I covered the chicken with foil 1st as recommended, and am very glad I did, because covering it for 30 min. and baking uncovered for 45, it still got a bit too crisp. I only used 1/2 the butter too, and didn't miss the extra at all. Served with rice, and the family loved it.

Quick and Easy Pancit

This recipe is so easy. Instead of slicing the cabbage, I chop it super fine. I also added a small amount of green curry paste to give it a little more flavor. With the curry paste included, the lemon wasn't as necessary.
