Simple White Cake

Reviewed: Apr. 7, 2012
I beat the heck out of this at every step, per everyone else's advice. Added 2 tablespoons extra flour for HIGH ALTITUDE adjustment. Baked a dozen cupcakes and 6" cake. Cake is moist, dense and tasty...not even frosted yet. A keeper when in a pinch (meaning I don't have a store bought mix and need to make cupcakes!) Thanks!

Flip-Flop Cobbler

Reviewed: Feb. 20, 2011
I made this dish for the 1st Annual Cobbler Bake off at church. It was very eye pleasing and watched several eyeball it on the table as they walked by. Needless to say, the 4 qt casserole dish was emptied quite quickly! (I doubled the recipe.) However, it didn't win any prizes. boo hoo! I'll make again, it was very easy and tasty. I also used frozen blackberries for the fruit.

Slow-Cooker Chicken Tortilla Soup

Reviewed: Jan. 6, 2010
So easy & satisfying! I used frozen, uncooked chicken breast, chopped up then added to the crock pot, cooking on low for 6-7 hours. It was yummmy! Even my hubby, who doesn't like cooked tomatoes, enjoyed!

Taco Bake I

Reviewed: Nov. 22, 2008
eww! I, nor did my family, care for this dish. It was low in the taste factor and the visual appeal didn't rate much higher. Perhaps, it could be used for a dip, but not a main dish. I won't fix this again.

Strawberries with Balsamic Vinegar

Reviewed: Jun. 10, 2008
This was such a simple and tasty after dinner dessert. Loved by my husband and I! I served the strawberries cool over shortcakes made with Bisquick...yummy and elegant all in one. I'll use for a quick "gourmet" type dessert at my next dinner get-together...and perhaps serve over sugar-free vanilla ice cream.

Tender Pork Roast

Reviewed: May 7, 2008
This was simple and delicious. It was a bit on the salty side, but I'm sensitive to salt. My family thought it was fine. I'll definitely make this again, but may cut back on the soy.

Chicken Breasts Stuffed with Crabmeat

Reviewed: May 7, 2008
This was very good. I substituted crushed rosemary & olive oil crackers for the bread crumbs (only because I didn't have any bread crumbs!) and used canned crab meat. Yummy! and easy. It was a winner and very "gourmet". I'm headed to visit my daugher and son-in-law this weekend and going to prepare for them...I'm going to impress them!

Actually Delicious Turkey Burgers

Reviewed: Apr. 10, 2008
We really enjoyed these turkey burgers. Followed the recipe exactly. They were very tasty. My 13 year old son was skeptical about trying them out but ending up eating two and said we needed to eat more turkey vs ham-burgers! wow!

Rump Roast Au Jus

Reviewed: Feb. 26, 2008
Average results. I left out the chili powder. My roast was dry and too spicy. We ended up tossing the au jus and eating the roast, sliced, smothered in A1, in sandwiches. I won't make this again.

Sweet Mustard Chicken Bake

Reviewed: Jan. 25, 2008
My family enjoyed this recipe. Chicken was moist and modestly flavored tangy and sweet to the palate. I added 1/8 tsp coriander and 1/8 tsp paprika. I also marinated the chicken for 1 - 1 1/2 hours before baking. I'll make this dish again! I served with wild rice and green salad.

Chocolate and Almond Biscotti

Reviewed: Jan. 24, 2008
They practically melted in my mouth!! I made some changes, added 1/2 cup water (per other's suggestions), used rum instead of whiskey and added 1/4 whole flaxseed. These are great and I will definitely make again!

Beef and Noodle Casserole

Reviewed: Dec. 13, 2007
This was simple and effective. Next time, I will cut back on the tomato soup..perhaps only 1 1/2 cans and some milk or water to make up the liquid deficiency. Otherwise, it was "right on time" for dinner.

Sour Cream Coffee Cake III

Reviewed: Nov. 11, 2007
I baked this cake for a church-fellowship. Cake was tasty and moist, yet very crumbly....looked very messy. Also, I had to bake for approx 70-80 min! I probably will not make again.

Shrimp Scampi

Reviewed: Oct. 21, 2007
Gosh, I don't want to be harsh, but this simply reminded me of ramen. Granted, ramen doesn't have shrimp in it, but not hard to throw in some frozen shrimp and end up with the same results for less time. This was easy to prepare, but just not that tasty. Ramen, truly, tastes better.
