Sugar Snap Peas

Nice, simple healthy way to prepare peapods. Thanks for the recipe! I had fresh, local peapods, and it was easy to pop them in the oven while grilling and preparing the rest of dinner. I didn't have fresh thyme, but I look forward to adding it next time. I cut back on the olive oil -- only brushed on as much as needed to cover.

Parsley Red Potatoes

Yummy, easy potatoes -- would be great to cook for a crowd! To reheat for leftofters, I browned them in a pan sprayed with Pam. Next time I'll throw some diced onion in the pan as well . . .

Sesame Seared Tuna

Incredible -- am so proud of the meal I just made -- thanks for the recipe! I omitted the mirin (tasted great without), and also put the sesame seeds on after searing and added wasami to the dipping sauce as others suggested. Seared on an indoor grill pan at high heat for 1 1/2 minutes per side -- beautiful grill marks and about medium rare. Yum! May add some garlic and fresh grated ginger to sauce next time . . .

Amazingly Easy Irish Soda Bread

This was a good recipe -- I would call it easy, not amazingly easy! The dough is crumbly and does take a bit of time to knead together and shape. I used butter instead of margarine, and baked on a baking stone, using parchment paper underneath. Very yummy!

Spicy Lime-Cilantro Marinated Flank Steak

Had steak fajitas for dinner tonight and this was fabulous!! Actually fixed it indoors on a grill pan (as week night and not enough time to heat up the outdoor grill) and it worked great. I just brushed the pan with oil and seared at high heat. The fact that the marinade was a greenish color (similar to pesto or guacamole) surprised me, but the flank steak retains the color, not the flavor. And the flavor is amazing! I drizzled the extra sauce into my fajita, and even used some as salsa for chips (a sweet salsa, but a good one!). Thanks for the recipe -- it's a keeper!!

Cinnamon-Raisin Granola

Yum -- yum, yum, yum, yum! My three-year old helped me, and after putting the oats and coconut in the bowl, I let him add some extra ingredients and mix it up. He added a bit more coconut, craisins, pecans, and chocolate chips. It was yummy before we even put it in the oven. In hindsight, I should have mixed the chocolate chips in as it was cooling as they formed little chocolate clumps, but it still tastes great. Unfortunately, my son won't taste the finished result (he's just at that difficult food age), but I'm hooked! No more expensive store granolas for me -- they pale in comparison anyway!

Rachel's Tomato Basil Soup

Incredible recipe! I tripled it to take to my son's school and I was blown away by how easy and tasty this recipe is! Several people asked for the recipe and one is making it for a tailgate this weekend! The only thing I changed was to add some minced garlic. I used homemade chicken stock (only because I had some frozen) so I needed to add a little salt as well. I may cut back a bit on the cream and butter next time, just to save calories. Fabulous -- thanks for sharing!

Garlic Red Potatoes

LOVE these. Have made them as a side dish whenever I make dinner for friends (i.e., new baby drop off dinner) and they have been a hit. I turn the heat up to 400 and bake uncovered -- otherwise, I find it takes a lot longer than recipe says. Even better reheated the next day in a skillet with a bit of oil -- yum!

Excellent! We ate an entire loaf last night . . . although I might try out some of the suggestions posted by others, I thought it was perfect as written! Run knife around edge and invert to cooling rack while still quite warm to avoid sticking.

Crawfish Fettuccine I

Great recipe and was a big hit at our party. I was a little leery about adding Velveeta, but it worked out great. I only added 1 tsp cayenne after reading other reviews, but might kick it up to 1 1/2 tsps next time for a little more spice.

Sausage and Apple Stuffing

I made this on Christmas Eve, and then again this week as cold weather comfort food. I substituted kielbasa for the sausage, which was delish! Browned it first. Also, I tend to add more onion and less water chesnuts and celery -- just personal taste. Both times, I chose not to add the whole third apple. BEST stuffing I've ever had -- love it!

Spinach Dip with Water Chestnuts

Great, easy spinach dip! Disappeared at our party. Very creamy -- I used lowfat mayo and sour cream. You could cut back on both to save calories and it would still taste good.
