Lemon Chicken Piccata

I took the advice of some other reviewers and pounded the breasts, breaded them with bread crumbs with oregano,salt & pepper, used some white wine and some chicken broth (mostly wine), and lemon zest along with the juice of the lemon. I didn't marinate the breasts, but let them simmer in the sauce for about 20 minutes while it thickened. The butter is essential. I'm not a fan of capers, so I didn't use them. The sauce was delicious! the chicken was moist and tender. I served it over soft polenta and there wasn't a bite left!

Pumpkin Chipotle Pasta Sauce

Delish! Made it exactly as written. Very simple, very good! You could add chicken or shrimp to it, but not necessary. I think a little brown sugar would make it even better.

Honey Baked Chicken II

I actually left the butter out all together (unintentionally) and this was still delicious! I added garlic salt & cayenne and put the thinly sliced onions on the bottom of the dish. Those onions were amazing! Next time I'll double them! Definitely a keeper!

Sesame Pasta Chicken Salad

The flavor was good, but I think it needed more dressing. Next time I will double it. We did wait 24 hours before eating it, so maybe too much got absorbed by the pasta. Also, I will reduce the amount of pasta and increase the veggies: shredded carrots, snow peas, green onion, red peppers, maybe water chestnuts. It just came out a little dry and bland...

Ranch Dressing II

I wanted a lighter calorie dressing so used 1/2 light mayo and 1/2 fat free sour cream. I added reduced fat buttermilk to loosen it up. It is delicious and my new favorite low cal dressing!

Dad's Leftover Turkey Pot Pie

Next time I'd like to have a little more liquid, but the flavor was good. I added lots of veggies: peas, celery, carrots, onions, leeks, mushrooms as well as leftover turkey. Very good!

great recipe! I also added some vanilla and increased the sugar by 1/4 cup for cranberry/almond (to counter the tartness!). I also tried chopping apples and walnuts and adding some cinnamon and nutmeg. Next, I'm trying chocolate & toffee with a caramel drizzle!

Ruth's Grandma's Pie Crust

I have used a very similar recipe (my grandmothers!). For those who say it makes too much for a double crust pie, use 3 cups flour, 1 1/3 cups shortening, 5 tablespoons water & 1 tablespoon vinegar, 1 egg. I don't use sugar in my crust, but if it is a fruit pie, I will sprinkle the sugar on top. I usually do not even put the dough into the refrigerator. I just roll it out on a floured board! It always comes out beautifully!

Triple Crunch Apple Salad

I didn't have the whipped topping, so I just added a little agave sweetner to the mayo & sour cream. I also added sweetened dried cranberries. (I know, significant changes, but I read the reviews...) We really liked the salad this way. And yes, it is important to have crisp, juicy apples. Mine were sweet.

Chipotle Mac and Cheese

This was AMAZING! I decided to use just the "sauce" from the canned chipotle peppers. There were no chunks of peppers and it still had all the flavor. The whole family loved it (some wanted MORE heat!) and I will definitely make this again.

Broccoli Casserole

This is an old favorite (one of hubby's most requested!). I do make it a little differently using low fat subs for the soup, mayo, & cheese. I omit the eggs entirely and use 1 can broccoli soup and 1 can mushroom. I add cooked rice to the mix (thus the extra can of soup) and usually some cooked, cut up chicken to make it a meal. But it is really forgiving, and changing the soups, cheese, even the veggies, changes the flavors. It is easy, can be made ahead & frozen, and like someone else said, "comfort food".
