Banana Upside-Down Cake

This was fantastic! Used canola oil instead of butter in my yellow cake mix, and added a tsp of coconut extract and a cup of shredded coconut to the batter. Also sprinkled coconut in the pan before putting the banana slices in. This was soooo moist and delicious!

Really simple and quick side dish. I skipped the jalapenos and added some diced garlic. Would definitely make again. Hubby loves anything with bacon, or what he calls "meat candy"!

Blueberry Dump Cake

This is really good with some minor adjustments. I followed some others' advice and melted 1/2 the butter. I used 1/2 the cake mix and stirred it with the berries first, then drizzled the melted butter. I then "dumped" the other 1/2 cake mix on top, and sliced pats of butter covering the top. It took closer to 45 or 50 minutes to bake though. This got gobbled up quick! Blueberry, strawberry, and raspberry (all fresh) went well together.

Artichoke and Sun-Dried Tomato Chicken

This recipe was simple and easy to make. I did not have pesto on hand, so I just chopped up some sun-dried tomato out the jar. I used Italian-seasoned diced tomatoes and marinated artichokes for extra flavor. I also on a whim decided that I wanted my chicken breasts lightly breaded, so I used Italian bread crumbs and egg to coat the chicken. My picky husband loved this dish. Will definitely make again.

Simply Potatoes® Easy Shepherd's Pie

This was a very simple recipe. I had everything on hand, and managed to throw it together fairly quickly. I used herb and butter seasoned instant mashed potatoes, and took the advice from other reviewers and topped it with cheddar and mozzarella cheese. I don't think I have ever had shepherd's pie without cheese on top. When I make this next time I will cut down on the thyme (think I might have put a little more than recipe called for), and definitely add more salt and pepper. Overall I recommend this!

Apple-Cinnamon Baked French Toast

I loved this recipe. I used apple cinnamon bread from Trader Joe's and cut it into cubes. Coated my apple chunks with cinnamon and nutmeg, tossed it all together with the bread. So easy to make!

Creamy Rice Pudding

This is the best texture rice pudding that is the simplest to make. Great for when there is left over rice in the cooker. I always add cinnamon or nutmeg, and any kind of raisin seems to work just fine.

Sun Dried Tomato Chicken

This was pretty good. I didn't cook the tomatoes prior, just chopped them up and used them in the sauce. I already had some grilled chicken left over from the night before, so I just poured the sauce over the warmed chicken. Served with bow tie pasta. Next time I will add more seasoning (or at least salt). Was a little less "sun-dried tomato" tasting than I thought it would be.

Party Cake Topping

This is so easy to make, and I was able to substitute 1/2 coconut milk and coconut cream pudding mix. Turned out wonderful for my coconut cake. Will definitely hang on to this for a good base frosting.

Perfumed Coconut Cake

Followed this recipe almost exact, except I couldn't find a cake mix without pudding already in. I put a box of pudding mix in anyways, and this cake turned out so moist! I didn't have any coconut extract, but wasn't looking for a super strong coconut cake. I also added a little sweetened flake coconut to the batter. I checked my box mix baking time, and it was only about 25 minutes, so I undercooked by a few minutes. I could have taken it out even earlier, but it was fine. I used the party cake topping recipe from this site, but substituted coconut cream pudding mix and coconut milk. YUMMY! This cake was inhaled by my coworkers!

Simply Lasagna

This was a great base lasagna recipe. I used italian sausage in place of the beef. I like chunky spaghetti sauce, so I used a mushroom/garden veggie one. It took about a jar and a half. I took fresh spinach leaves and wilted them on top of the sauce as it was simmering, then mixed it up and added the meat. Served this boldly for the first time when I had guests over, and it was gobbled up. Went great with a nice red wine.

Blonde Brownies I

This was quick and easy. Had all the ingredients on hand. I mixed in a handful of peanut butter chips, and topped it with a handful of chocolate chips. I did follow some previous reviews and cut the salt and vanilla down a tad. This is a definite keeper!
