Guacamole

Reviewed: Jul. 30, 2010
Usually I don't follow recipes on here exactly. Typically I read all the reviews and tweak recipes how I think I would like them. For this recipe I did not tweak it at all (unless you count using red onion, but it didn't specify what type) and it was FANTASTIC! I could hardly keep my hands off it until it was time to serve. I mashed the avocados with the lime juice and salt, and the rest of the ingredients I chopped together in my food processor, then added to the avocados. Soooooo good.

Ground Beef 'n' Biscuits

Reviewed: Jul. 3, 2008
This is a really good, really easy dinner. I use the crescent roll rounds on top instead of regular biscuits and it adds oh so much buttery deliciousness! Not as good reheated though, so its best to eat it in one sitting.

S'More Bars II

Reviewed: Jul. 3, 2008
Pretty good, but I felt the crust was too buttery, and it didn't set too well. Everyone else seemed to really like it though.

Blackberry Cobbler II

Reviewed: Jul. 3, 2008
This is soooo good! As per other suggestions I doubled the topping (though ended up not quite using it all) and transfered it into an 8x8 pan since I don't have an iron skillet. I also added cinnamon to the topping, and it was fabulous! I took it to a church potluck and I had two people tell me how delicious it was and then ask me if I knew who made it. One of the women said that everyone was asking her if she knew who made it and her reply was "Just because I am coming back to take the last 2 pieces doesn't mean I know who made it." It was a big hit for sure.

Eggplant Parmesan II

Reviewed: Jul. 3, 2008
This was super yummy, even right out of the oven after just baking the breaded eggplant. It is a bit time-consuming, but the steps are easy. My only complaint was that I followed some other suggestions and salted the eggplant before breading it, and although I rinsed it, it still tasted too salty to me in the finished product. Other than that, it was delicious and my two year old couldn't get enough. Will definitely make this again.

Kielbasa and Veggies

Reviewed: Jul. 3, 2008
This was a delicious and very easy recipe to make. The only thing that is a negative for me is the nutrition facts. I try to be more health conscious so I would definitely reduce the butter (I ended up pouring a lot of t out anyway after it was cooked - the food was just swimming in butter!) and try to substitute for some low-fat options in the cheese and sausage as well.

Mama's Best Broiled Tomato Sandwich

Reviewed: Oct. 30, 2007
Very quick and easy. I love olive oil and balsamic vinegar so I thought it was great; my grandma and daughter thought it was just okay. I used a little less mayonnaise than was called for, which I think was the problem for my grandma. I wish there was a good substitute for the mayonnaise, then it would be a 5 star for sure!

Warm and Spicy Autumn Punch

Reviewed: Oct. 24, 2007
This was a nice change from regular apple cider. It was sweeter, so I think it is easy to drink too much. I liked the idea of putting cinnamon candies in it, but I didn't try that. It was okay to have once but I think I'll look for a different recipe next time.

Apple Butter Pork Loin

Reviewed: Oct. 24, 2007
Yum yum yum! The flavors in this are amazing! I used a pork loin (not tenderloin) thanks to the reviewers suggestions, and it was beautiful. Tender, delicious. Just the right amount of flavoring, and very easy.

Baked Stuffed Pumpkin

Reviewed: Oct. 24, 2007
This was delicious! I loved it. The spices were great, and it was so fun and festive to serve it in a pumpkin. People are impressed by the presentation, but the flavor was great also. I left mine in the oven quite a bit longer than suggested, but I am sure it just depends on the pumpkin so you have to check it. Seems like it would be hard to overdo it though. The only problem I had was that when I was trying to scrape some of the pumkin into the mixture when it was finished I ended up with big pieces of pumpkin in there and it was hard to cut it up while mixing it. Delicious and fun recipe though.

Winter Squash Rolls

Reviewed: Oct. 24, 2007
I made these for a pre-Thanksgiving dinner and everyone thought they were great. They were easy to make and the dough was so nice to work with. Everyone was surprised when I told them there was squash in them (which was a little test for me because half the people eating them don't like squash). I also halved the recipe and it made 12 good sized dinner rolls. Will definitely make again.

Black Cat Cookies

Reviewed: Oct. 23, 2007
These cookies are so cute! I didn't use the popsicle sticks, but everyone who saw them thought they were great. They were not difficult at all - I made them about an hour before I left to a Halloween treat exchange.
