Skillet Ham, Cabbage and Potatoes

Reviewed: Nov. 24, 2010
This was easy to make. Adapted the recipe slightly by adding pepper when the cabbage was added. We also a can of corn for color when the meat was added. Instead of using ham, we used a chicken hotdog (with red peppers and spinach) sliced thinly. It was very good.

Spaghetti Sauce with Ground Beef

Reviewed: Mar. 14, 2010
I expected more from this recipe. My family and I were sadly disappointed with it. I followed the recipe as written but the spices overpowered it.

Hasselback Potatoes

Reviewed: Jun. 24, 2009
An easy way to slice these without cutting through is to use two cutting boards (same height) - one of each side of the potato. Very easy. My family really didn't like the potatoes as much as I wished.

Banana Pudding IV

Reviewed: Jun. 22, 2009
Wonderful pudding. I didn't change a thing. Be sure to let the cream cheese warm to room temperature before you mix it with the condensed milk. I mixed the cream cheese and the condensed milk together completely before adding the pudding mix, milk, and vanilla. It's very rich but tastes great!

Anniversary Chicken I

Reviewed: Dec. 28, 2008
Excellent! We butterflied the chicken, pounded it, coated it with egg and then seasoned with Italian breadcrumbs it before browning. This yielded quite a bit of chicken. We then ended up with two layers in the 9x13 pan. Each layer had the teriyaki basting sauce, the ranch dressing (used fat free) and the cheese. We added the bacon bits and the green onion on top and then covered the pan with aluminum foil. Since we had butterflied the chicken and then pounded it, the oven cooking time was 15 minutes. The chicken was nice and tender. The presentation was great! The only drawback were the onions. They were a bit too strong.

Chicken In Basil Cream

Reviewed: Jul. 27, 2008
Excellent! I butterflied the chicken so that it wouldn't take long to cook. I followed the recipe (except the pimentos). Very easy. Very good. Next time, I'll butterfly and pound to flatten to see if we like it better that way. It's definitely something to at least try. 8/4/09: We had this again. Instead of pouring the sauce over the chicken, I put the chicken back into the skillet with the sauce - to reheat the chicken a tad if needed. Wonderful! My daughter had two pieces and she is not a chicken fan. This is great with mushrooms on the side!

Broccoli with Poppy Seed Butter and Parmesan Cheese

Reviewed: Jun. 8, 2008
It tasted great. Timing is important here. Make sure you are cooking this right before you are ready to eat. It cools down fairly fast.

I am not a fan of pumpkin pie but this is great! My daughter loves "pumpkin pie" but said this pie is even better!
