Mediterranean Chik'n and Artichokes

This was tasty, light and filling. It was a one dish meal and the different textures and tastes were great. We usually do not love the "fake meat" but the morning star chicken strips are terrific and we will make this regularly.

Portobello Mushroom Stroganoff

This was a good substitution if you can't or don't want the beef. I made it with different mushrooms BUT you must use portobello to maintain that "beef" stroganoff expected taste. I would cut the sourcream amount to just 1 cup it was a bit too much), but I would make it again.

Whipped Carrots And Parsnips

This was great, I did not blend it though (I was wanted texture to the dish) so I hand mashed the veggies and it was a super side dish that was lighter than mashed potatoes and a nice change from plain carrots-thanks for the recipe, will include it in the rotation.

Red Cabbage With Apricots And Balsamic Vinegar

I followed the recipe exactly -but it was a bit too sweet for my liking, sort of like a "candied" taste. I am going to wait a while and try it again with just a drop of preserve for flavor or none at all.

Asparagus, Feta and Couscous Salad

This was very yummy-we used trader joes multigrain couscous (instead of regular). It has a combination of mini chickpeas, quinoa, large israeli couscous and orzo. The nutty flavors of the blend along with the cheese and asparagus worked very well with the sweet balsamic vinegar. We will certainly make this again.

Smashed Cauliflower

It was great to have another recipe for cauliflower that was not a casserole. This was yummy -I cut the cheese in 1/2, eliminated the broth and added some fresh chopped olives (I was not trying to pass it off as mashed potato)..will make it again.

Broccoli Salad

I steamed the broccoli (slightly) as a few suggested....This was tasty and healthy. I was hoping the dressing had a bit more zing; but I would definitely have it again.
