Chocolate Covered Cherry Cookies II

I doubled this recipe (froze half) and used 1 egg, 2 egg whites, 1/2 cup butter and 1/2 cup smartbalance and whole wheat white flour. I did not double the frosting recipe thanks to the reviews but I still had a ton left over. The cookies came out very moist and yummy and I will definitely make them again.

Pumpkin Pancakes

I used vanilla soymilk and these came out fantastic. The batter was very thick but I scooped them out with 1/4 measure and they cooked up into nice thick pancakes. Yum, thanks for the recipe!

Pumpkin Apple Streusel Muffins

I made these for a 4th grade pumpkin celebration & doubled the batch so I'd have some leftovers for us. Cutting up all of the apples added to my prep time but it was worth the effort. They are on the sweet side and my kids have been enjoying them as snacks. I made mine with 1/2 all purpose 1/2 whole wheat flour and they came out great. My child reported that all of the muffins she brought to school were grabbed and loved by her friends. The left overs were even better on day #2.

Great Garlic Knots

I had a batch of bland whole wheat pizza dough in the freezer and this was a perfect way to use it up without subjecting my family to another round of ho-hum calzones or pizza (and I refused to throw it away!). I used dry rosemary, garlic powder as well as salt but doubled up the amount of garlic because we love it and because I knew the bread was so bland. They smelled fantastic while cooking and tasted great. My son & husband gobbled them up. Next time I'll use fresh rosemary and a better bread base and I bet they'll be even better.
