Maple Salmon

I liked this a lot. Yes, it was sweet. But as the poster mentioned, maple syrup is soooo yummy. Which brings me to my first point: use REAL maple syrup. Not the flavored high fructose corn syrup (lite or otherwise!) - when a recipe calls for maple syrup, it means the concentrated tree sap; don't substitute, it never turns out right. I added 1/2 t horseradish as someone mentioned; it took away some of the sweet without adding a strong flavor. I also took that extra marinade and threw it on my stove to boil for a few minutes. Made the yummiest glaze. The kids loved this. In fact, I had a hard time stopping them from eating the marinade (before I added the salmon)!

Fort Worth Fish Tacos

The white sauce was surprisingly good. Even the kids liked it. The batter worked great. For some reason the fish didn't taste good, but I think that may have been something on my end. I will definitely make it again to see what that could have been.

Maple Kale Crisps

I mix my oil and maple syrup (REAL maple syrup please!) in a ziploc and let it sit for a few minutes. I spread it on my dehydrator trays before sprinkling with salt. Lots of salt. I then turn on my dehydrator to 110 degrees for 8 hours. I love this. It is like caramel popcorn with kale instead of corn. Definitely one of my favorites - even the kids love it.

Pretty Chicken Marinade

Pretty tasty. We only had an hour to marinade it, but it turned out mighty mighty tasty. Will definitely make it again. We only had yellow mustard and regular soy sauce. My son wants me to mention that we used HICKORY liquid smoke (We also have apple and mesquite in the house for jerky)------ edit: I have been making this often. One of my favorite ways is to make a LARGE batch of the marinade then place 1.5# of fresh raw chicken breasts (sliced about 3/4" thick and in palm-sized pieces) in a ziploc bag with 1 1/3 cup of marinade and freeze. I do 6-8 bags at a time for easy dinners.---- the other thing I did last night was take the marinade that was left when I removed the chicken and boiled it on the stove for about 10 minutes. The oil separated, and I poured it off, but then there was a yummy yummy sauce that added zest to our chicken salad last night and a wrap I had today with the leftover chicken.

Pumpkin Soup

this was great! much better than our previous pumpkin soup. I did add 1/2 t garam masala as per other reviews, and it was prefect. Also, skipped the whipping cream and added a dollop of sour cream to each bowl. warm and filling.

Vegetable Beef Minestrone

Oh, this had such a great flavor! I did not have any bacon, but I did use bacon grease to cook the veggies into a mirpoix. I was very surprised - my kids loved it, and cleaned their bowls. haven't heard from hubby yet - I think he is not a fan: he likes his soups smooth.

Pineapple-Lime Rice

Parmesan-Black Pepper Arborio Rice Pilaf

family really liked this. I ran out of arborio rice, so had to use 1/4 c of my basmati/brown mix (2 parts basmati, 1 part brown) to round out the recipe. but it was really good. even very picky hubby ate it.

Jewish Coffee Cake

ok, full disclosure here, we made a number of changes First, we halved the batch for my small family, and cooked it in the toaster oven in a small round cake pan. Also, we are cutting down on our sugar, and since coffee cake is overly sweet to balance coffee, I often find i can cut the sugar in half. I think that next time I will only cut the white sugar in half, but only cut the powdered sugar by 1/4. I did half whole wheat and half white flour. And since we do not eat nuts around here, I substituted a 1/2 cup of crushed dried raspberries. Overall, it was a great breakfast.

Sweet and Sour Sauce II

we tried this for egg roll dipin's. tasty. couple of things: we don't do a lot of sugar so we took someone's advice and used pineapple juice instead of water, and then added agave a bit at a time until it was the right sweet for us. it turned out to about 1/3-1/2 c. we also used rice vinegar.

Roasted Brussels Sprouts

First, a disclaimer, I am a habitual snitcher.... I taste everything in the various stages of preparedness (except brownie batter - I go straight to the batter with a BIG spoon, no "snitching" there). So I put the sprouts - mine were exceptionally large, so I quartered them - in the bag with the oil and seasonings. Then I tasted. oh, they were sooo good! I probably ate a good third of them like that. They were sweet and salty and I love the flavor of good EVOO. Then I cooked them. My 8-yo son said they tasted better cooked (I had made all the kids try them raw, they were so good), but he didn't eat more than the one; my 6-yo daughter and I liked them better raw; my 3-yo girl threw them up both ways, and dh wouldn't touch them at all. So my final rating is, good recipe, just don't cook them!---------edit: I have changed my mind. This is the BEST way to eat brussel sprouts. There is just no comparison. Except, I stand by my admonition to just eat them raw. I have been making a quart ziploc of these every week, and snack on them through the day - they get better the longer they sit in the marinade; I eat them for dinner when the rest of family is having carrot or cucumber sticks; 2 of my children snitch them out of the fridge when I am not looking. And if I really want to cook them, so the rest of the family will eat them, they are already marinated. All around, a happy happy recipe :)

Fisherman's Quick Fish

everyone liked this, even the picky 3-yo, once she could be bribed into trying it (french fries are always useful on new food night!!!!) I did use caesar dressing instead of Italian, and it had to cook more like 15-20 min, but even with that high heat, it was moist and tender and the topping was crunchy, not burnt. We'll make it again.

Fantastic Lemon Butter Fillet

I really liked this, but since my kids did not, I will not be making it again. I think they do not like garlic taste unless it is fried golden. Maybe I could fry the garlic in a bit of butter first, then add the rest of the ingredients. But I do not think I will be making it again.

To Die For Blueberry Muffins

My favorite blueberry muffin so far. I LOVE blueberry foods; hubby does not like "chunks" of stuff in his food - This means a lot of things need to be pureed before I cook them, including blueberries. So I took my dehydrated blueberries, put them in my coffee grinder, and made a chunky blueberry flour to which I then added enough water to make a paste. I swirled this into the batter, and everyone loved them. I did add a handful of reconstituted berries into my muffins. I think I might make a batch with whole berries just for me :)

Pumpkin Pancakes

made these; they were too runny. so I added some flour. I also added some nutmeg, ginger and clove (since hubby likes the spices of pumpkin pie). I did not like these at all. the kids are eating them. Haven't heard from hubby yet. But unless he gives a definite thumbs up, I will not be making them again.

Good Old Fashioned Pancakes

This is our alternate pancake recipe. I follow exactly, and add dehydrated and blended-to-tiny-chunks-if-not-flour berries - raspberries, blueberries or strawberries to give a berry flavor without extra liquid.
