Baked Dijon Salmon

My friend made this for my husband and I. It was grilled on a wood pellet grill. Oh my! It was fabulous! I don't understand how this could have gotten any bad reviews at all. It has been 3 weeks since we had it and my husband has been talking about it almost every day and he doesn't usually like salmon at all. I am surprising him tonight. We are buying a wood pellet grill this spring!

Authentic French Meringues

These turned out perfect!! I followed the directions from others to use room temp egg whites. I beat them on high for 15 minutes and then added the sugar slowly. Life these!!!

Cream Cheese Mints

These are super easy and really good. I followed the advice of another and ran mine through the food processor. It mixed really well. I didn't have peppermint oil so I used 1/4 tsp of extract. I rolled them into little balls and then coated them in candy cane that I also ran through the food processor so it was finely ground. I didn't use food coloring and they look beautiful! The candy cane really adds a lot.

Pan Seared Tuna with Citrus-Herb Vinaigrette

Simply yummy. The flavor is amazing! I barely seared the tuna. I used sushi grade. My whole family loved it. Definitely a keeper. Thanks Ryan.

Upside Down Pumpkin Cake

Made this the last two Thanksgivings. Everyone asks for the recipe. Just make sure you use parchment paper so you can flip it. I piped whipped cream on top. It looked as good as it tasted.

I made this for Thanksgiving. It turned out great. I put raspberry pie filling on the side. Next time I will make a caramel and chocolate option too. Love this recipe. It's a keeper.

This is good. It just needs more seasoning. It's a little bland when you taste the ricotta. Next time I will mix it with an egg and some seasonings like others have done.

World's Best Lasagna

Simply superb! I used ground Italian seasoned turkey instead. I served it to a large group cohere were rave reviews. I am making the sauce again tomorrow for spaghetti. I love the flavor. So good!

Playgroup Granola Bars

I made these using craisins and pecans. I also took the advice of others and added 1/2 C applesauce. Everyone who tasted these absolutely loved them! I am preparing to make two batches, one craisin & pecan and the other, dried apple cinnamon. The possibilities are endless! Thanks for the recipe. Love it!

Maple Apple Crisp

The taste is good. I feel it needs cinnamon. I followed the recipe exactly as written. It is way too soupy. Might try it again and cut the butter in half as others have suggested. I will definately add some cinnamon next time. Not overly impressed with this recipe.

Chocolate Brittle Surprise

This is a great and easy recipe. It is very addicting. However, turn the oven down to 300 degrees. Caramel should not be heated to such a high temp. That is why there are so many complaints about burned edges. Use wax paper to press nuts into the chocolate. I use crushed natural almonds and club crackers. It turns out wonderful!

The Best Banana Bread

This is a good basic recipe. However, I made changes and got rave reviews. I took some advice of others and used 1/2 C white sugar and 1/2 C brown sugar and also added cinnamon. I also reduced flour to 1 1/2 C and added 1/2 C old fashioned oats and then sprinkled a few on top before baking. I made mini muffins. They were so good and didn't last long. I will make these again and again. It's my new banana bread recipe.

The World's Best Turkey

I cooked for 12 people for an early Thanksgiving. I used this recipe but had a 20 lb. turkey. I doubled the apples but the rest was the same. I let it sit on the warm stove top in the bag for at least an hour to reabsorb juices. This turned out excellent and so juicy. My brother-in-law, an avid chef took home the recipe to make for Thanksgiving day. Everyone loved this!! I will always make my turkey this way. Just make sure you give your turkey time to rest in the bag before cutting. Also, turkey baked in cooking bags tends to cook much faster. Thanks for the recipe.
