Steve's Chicken Noodle Soup

What a Super-Simple meal! It came together quickly and went well with a loaf of crusty bread. After reading reviews, we did ramp up the spices a bit and only used a quarter of the noodles called for. We will definitely make this again.

New Potatoes with Caper Sauce

This turned out to be a simple & satisfying side dish. It looks prettier, with the baby potatoes, but the flavor seeps into quartered potatoes better.

Parmesan Roasted Acorn Squash

I actually got my husband (who Hates squash!) to happily eat this. A Simple & Unique side dish. Also, a nice change from the usual "nutmeg/butter/maple syrup" routine.

Caramel Apple Cranberry Pie

What a Beautiful pie emerged from the oven! I only needed about 1/2 of the topping to achieve a nice result. We were snowed in, so I could not get out for the Granny Smith's... Using Gala apples probably gave the pie a slightly sweeter taste. As we love cranberries, I used a 50/50 combo of dried & whole fresh berries. This recipe was a refreshing change and has definitely earned a spot in the regular rotation.

Aunt Norma's Rhubarb Muffins

These baked up beautifully and were well received. On a side note tho... I used frozen rubarb from our patch. As they had been in the freezer a bit, they were slightly "chewier" than I would prefer. I think, next time, I will bake up these muffins when the rubarb is fresh.

Chef John's Caramel Apple Pie

Wow. The Best apple pie I have Ever made! I followed the directions Exactly and ended up with a beautiful pie that earned rave reviews! Definately a 5 star keeper. The best reviewer advice, was to completely let the syrup cool, before adding. Thanks, Chef John!

Krystal's Perfect Marinade for BBQ or Grilled Chicken

My husband & I woke up yesterday morning (Memorial Day) and decided to try a totally new grilling recipe. We read the reviews and took the suggestion of cutting back on the sesame oil a bit. Wow! While we usually Don't try out new recipes on Holidays, This was a Huge Hit! Don't let the strong smell scare you....It cooks off and you end up with some Pretty Amazing Grilled Chicken!

Teena's Spicy Pesto Chicken and Pasta

We've made this twice now. The first time, according to instructions. Last night, we sauteed the chicken in white wine and then went with one reviewer's suggestion and added cream cheese & half and half (also mixed in baby green peas at the end)...This recipe is simple, adaptable and Delish!

Best Baked Chicken

Tried this recipe last night. Let breasts sit in sour cream for a few mins as one reviewer suggested. I am still not sure exactly what I think. The breasts Were very moist and the sour cream definately gave it a distinct flavor. One reviewer suggested switching to lime juice next time. Think we'll try that...

Cream Peas

I Hate creamed peas. My husband Hates creamed peas. Watery, Bland, Yuk! Came upon this recipe, while looking for something "new" for last night's side..... Followed recipe exactly, along with adding a pinch of cumin & cracked peppercorns, suggested by one reviewer. My husband dug in and said: "Wow! What did you do to these peas?! They are Incredible"! Yup! We'll Definately Be Serving These Again!

Baked Teriyaki Chicken

Tried this recipe last night. Served with mashed potatoes & green beans. Used 4 chicken breasts and had Plenty of glaze. This is a simple weekday meal and one I believe I will make again. My only hesitation...This can be a Very Salty meal...I Really need to buy a bottle of low-sodium soy for recipes like this.

Slow Cooker Cheesy Potatoes

My husband & I were really looking forward to trying this recipe. Unfortunately, we weren't impressed with the results. The 1st time, we made according to directions. We both agreed, They Were Bland! Last night, we made another attempt. This time, we used: Campbell's "Fiesta Nacho Cheese" soup, a few dollops of sour cream, evap milk, French's onions, half bag of shredded chedder, a TBSP! red pepper flakes, garlic cloves and diced up a few fresh jalapenos from the garden. How could anything with So Many zingy ingredients turn out So Tasteless?!? Even with careful mixing, it had the look of vomit and was thin-tasting. I've had better tasting potatoes out of a box. May try 1 more time, using the cream of chicken a reviewer suggested...Otherwise, I am giving this recipe the boot!

Hasselback Potatoes

Served these last night. No complaints from family. No rave reviews either. We bought a 100lb. sack of Huge (Rock Hard!) potatoes, from a field up North. Even after pre-cooking in the mic for 5 mins, couldn't get them to "open-up" enough, to receive the butter/evoo. After 1 1/2hrs in oven, they still hadn't "fanned out" pretty, like the picture. This made it hard, to get toppings in the folds...Maybe, a different type of potato next time? *On a side note, I Am going to try this on Yams soon. Perhaps, some butter/brown sugar/cinnamon/pecan topping? Yum.

Hot Corn

We made this for the 1st time last night. We scaled the recipe back to 4 servings and used fresh garden corn. It's a nice change to boring, plain corn. Next time, I think I'll just spend a lil more time "smoothing out" the cream cheese, for better presentation. I added fresh jalapenos and red pepper for color. I believe this Is Worth trying again.

Baked Pasta with Sausage and Baby Portobello Mushroom White Sauce

Wow. Glad we decided to try this recipe. Very Simple weeknight meal. Crazy Good. My husband literally Inhaled his 1st serving and went back for 2 more. While not the most healthy recipe, sometimes, you just want Comfort Food for Supper... I did follow other reviewers suggestions and added an onion, red bell pepper and fresh chopped parsley. Also went a lil generous with the sauce. This recipe has earned a spot in the rotation.

Chicken Breasts with Lime Sauce

We tried this last night. A Mid-Winter Zing for the tastebuds! We cut the butter way down and it still turned out to be a hit. This was an easy week-night meal that we'll definately make again.
