Potato Salmon Patties

I used mashed potatoes instead of flakes and added some chopped celery in place of the onion. Keep the bones! They are an EXCELLENT source of calcium!

Pumpkin Apple Streusel Muffins

Very good muffins except as usual with muffin recipes, I cut the sugar in half and it's still plenty sweet. Also, I wasn't quite sure how much "1 can of pumpkin puree" was because here in Canada, there are different sizes of canned pumpkin puree.

Double Tomato Bruschetta

Best bruschetta I've ever had. Made it with garden tomatoes (not plum tomatoes) and added fresh oregano on top of the basil and it turned out great.

Chewy Peanut Butter Chocolate Chip Cookies

These are good, but cut the sugar by half... plenty sweet for my taste buds. I also used soy butter instead of peanut butter. Very yummy!

Roquefort Pear Salad

Vegetable and Tofu Stir-fry

This is very good but I did modify the sauce a bit. I used 1 cup of chicken broth, 4 tablespoons rice vinegar, 2 1/2 tablespoons honey, 3 tablespoons soy suace and a touch of oyster sauce. I used vegetables that I had on hand (broccoli & carrots) and served it over oriental egg noodles. Delicious.

Lemon Cream Cupcakes

These are delicious and very moist. I only put one cup of sugar and they were plenty sweet for our taste. I would suggest buying two lemons for the zest because one is not enough.

Orange Beef-Style Tofu Stir-Fry

I really like this recipe, although frying the tofu in oil kind of defeats the purpose of eating tofu at all. I have tried to broil the tofu after dipping the pieces in olive oil instead of frying it and it comes out crispy enough. I always more vegetables like mushrooms and peppers and double the sauce.

Amazingly Easy Irish Soda Bread

This tasted very good but the cooking time is way off. I had to keep it in the oven about 30 minutes more and the outside became overcooked while the inside was still moist. Next time I will lower the temperature and leave it in longer.

I don't understand why people rate this 5 stars and then list all the changes they've made because they had to improve the recipe. Anyway, I rate it 3 stars because they needed to be in the oven WAY longer than it says in order to get them to be crispy. One said they lowered the temperature to 200 and let them hang out there for 30 minutes or so. I think I will do that next time.

My Best Clam Chowder
