Southern Hollandaise Sauce

Definitely a keeper. Half a lemon was perfect for me. I used Louisiana Hot Sauce instead of cayenne. Yum!

Perfect Flat Iron Steak

I agree with other posters that the marinade needs more acidity. I would recommend substituting red wine vinegar and worcestershire sauce for some of the wine.

Perfect Baked Potato

This is the closest to a restaurant baked potato I have evr cooked, only the skin was better! Because my potatoes were large I turned the oven up to 375 and cooked them for 90 minutes. Tey were fluffy and perfect inside. I made loaded baked potatoes with butter, sour cream, cheddar cheese, pulled pork, bacon, barbeque sauce and scallions.

Asian Turkey Burgers

The meat is still dry and the use of uncooked onions does not help it at all. If you must make these, at least sauté the onions before mixing with the meat.

Rice with Almonds and Raisins

This was very good. I cooked the onions longer until they were caramelized and added a little bit of turmeric and half a cinnamon stick. It was delicious, even though I forgot the almonds! (I always cook my rice with a scallion, too).

Homemade Deviled Ham Spread

I thought this was pretty good, but I felt it needed a little "je ne sais quoi". So I added a couple more shakes of Tabasco, a bit more mustard and a touch of prepared horseradish and catsup. I included 1 tbsp of finely diced red onion as part of the 1/4 cup of onion. Like other commenters, it is a bit salty, if you have the option to use celery seed instead of celery salt I would substitute it as the ham alone has plenty of salt.
