About this Cook
I LOVE food, probably too much. I was an incredibly unhealthy eater as a kid and teenager. I hated most vegetables, salads, most meat, and any dish where different foods were 'mixed' together! In other words, pretty much everything. My tastebuds changed dramatically when I went to college, and I have enjoyed rediscovering food and learning how to prepare dishes I would have never touched in my earlier life. I worked as a prepcook at Perelandra Natural Foods in Brooklyn back in early 2006, which began my interest in vegan and vegetarian cooking. I am now a vegetarian and enjoying preparing delicious veggie meals for my husband, who doesn't like to cook - but loves to eat, just like me.

Mexican-themed feasts - enchiladas, quesadillas, guacamole Greek foods like Spanokopita and Hummus Stir-frys Breakfast foods - omelettes, egg sandwiches, pancakes
My favorite family cooking traditions
My mother is an amazing cook and an exceptional baker. I am still learning from her every time I go home to visit. My favorite foods by mom? Delicious soups and stews made from scratch served with homemade biscuits (my favorite!), creamy pastas and tortellini dishes, her famous Easter bread, and my all-time favorite: her homemade crandberry-walnut Christmas cookies!
My cooking triumphs
I have made amazing Spanokopita dishes for friends on more than one occasion - most recently served along with an authentic Greek salad. I was fortunate to learn how to make homemade tortillas from a Mexican woman who happens to be a migrant worker, along with her husband. It's taken much practice, but I have made a few invented Mexican dishes using tortillas made from scratch, including a "Mexican Tortilla Casserole" and "Baked Burritos" which I plan to submit to the site...
My cooking tragedies
I have had many, as any good chef has had :) My earliest memory was - at age 8 - deciding to make breakfast in bed for my parents on their anniversary. My younger sister and I decided to make pancakes, but I couldn't read fractions yet and misread 1/4 cup as 1-4 cups :) Needless to say, we had a runny mess. Luckily, my parents thought it was adorable and Mom saved the day by making everyone thick and fluffy-delicious pancakes.

Marrakesh Vegetable Curry
My husband and I LOVED this! We had almost all the veggies on hand, except zucchini, which I replaced with butternut squash. I only had 1/2 small onion, so I used spring onions and added them in Step 3. I also used sliced almonds and didn't blanch them, and based on the recommendations to use carrot and ginger juice, added fresh ginger in Step 2. I agree that the sauce was a bit thin — I ended up cooking it about 5-10 minutes longer that suggested to reduce the sauce a bit more and cook my potatoes through. Served this with quinoa and it was excellent. We fought over the leftovers!

Baked Kale Chips
I cannot believe how awesome this is! It has quickly become a weekly favorite for me and my husband, and I've made it for guests and gotten rave reviews. I was skeptical at first but this is now the only way I make kale. I have found a secret trick though that makes the preparation much easier. I have a spray bottle of grapeseed oil and meyer lemon oil that I use and when that runs out I will refill it with olive oil because the spray bottle makes it SO much easier to distribute the oil evenly without oversaturating it. Plus it's really fast! My mother in law loved this idea and bought a little spritzer to fill and does the same thing. She said she also tried this recipe with spinach and it worked great. Thanks for a great recipe!

Absolutely Fabulous Portobello Mushroom Tortellini
I've made this twice now, both times altering the ingredients slightly to accommodate my fridge... and both times equally delicious. The first time I only had button mushrooms, the second time I added in spinach and sun-dried tomatoes. Both times, I used Vodka sauce instead to make it a little healthier. It really is absolutely fabulous!
