Overall, this was a really nice cake. It was easy to make, but a little bit messy! My only surprise was that it wasn't a bit taller when it was finished (like a boxed angel food cake), but with that said, it wasn't too dense or anything. The only changes I made were to use 1 cup powdered sugar (vs. 1.25) and to use 0.5 cup regular sugar + 0.5 cup splenda. It was sweet enough with the bit less sugar. Once the cake was cooled, I cut it in half horizontally, and filled and topped it with a peach filling. The filling (which was GOOD!) was super easy: 1 package sugar-free vanilla jello pudding powder + 1 can peaches (cut up into bite sized pieces) + 0.5 cup milk + 0.5 cup peach juice (From can) + 500 mL fat free cool whip. Yum!
