Heavenly Angel Food Cake

Overall, this was a really nice cake. It was easy to make, but a little bit messy! My only surprise was that it wasn't a bit taller when it was finished (like a boxed angel food cake), but with that said, it wasn't too dense or anything. The only changes I made were to use 1 cup powdered sugar (vs. 1.25) and to use 0.5 cup regular sugar + 0.5 cup splenda. It was sweet enough with the bit less sugar. Once the cake was cooled, I cut it in half horizontally, and filled and topped it with a peach filling. The filling (which was GOOD!) was super easy: 1 package sugar-free vanilla jello pudding powder + 1 can peaches (cut up into bite sized pieces) + 0.5 cup milk + 0.5 cup peach juice (From can) + 500 mL fat free cool whip. Yum!

Espresso Bark

Simple and delicious! I melted the chocolate chips (with the marg) in a double boiler, while simultaneously melting the white chocolate using the microwave method. I very coursely chopped the beans (and probably reduced it down to about 1/2 cup). After spreading the chocolate/beans onto the cookie sheet, I drizzled the melted whit chocolate over the top, and sprinkled a few whole coffee beans around. Wow! This tastes great, and is very simple to make. Be careful though - this is VERY caffinated, as I learned after sampling some!

Annie's Fruit Salsa and Cinnamon Chips

Decided to try this recipe when I was looking for a healthy appitizer to take with me to a party. Well, everyone loved it and gobbled it down (and asked for the recipe). Made it tonight for the second time and my picky boyfriend (who was very iffy about it before trying it - he's not too crazy about fruit) loved it. I did change the recipe a fair amount though. I diced 1 green apple, 1 mango and ~8 strawberries. Mixed them together with 1 tblsp raspberry jam and 2 tblsp reduced sugar black cherry compote. I didn't add any sugar into the mixture, and it was definitely sweet (and juicy) enough, even with low sugar jams. For the chips, I used only 5 whole wheat tortillas (this was a better ratio of fruit to chips then the 10 I used the first time). I mixed splenda and cinnamon together in a ziplock bag and then tossed the (sprayed) chips in the bag with the sugar mixture. YUM!

Chicken Cordon Bleu II

Very good recipe. I made a few small changes in the preperation of the chicken. I rolled the cheese in ham, and then rolled the chicken around them. I breaded the breasts in both flour and then bread crumbs (using an egg wash). I fried them for about 5 minutes in oil until they were brown, and then baked them for about 30mins in the oven. They looked and tasted excellent! My sauce wasn't the best (accidently used some corn SYRUP instead of starch at first... i'm a beginner!) though it ended up tasting quite good. I ended up putting a fair amount of parsley in the sauce, but otherwise I followed the recipe. Served it all with wild rice, salad, mashed carrots/parsnips, and asparagus. It all disappeared!

Baked Brie in Puff Pastry

I made this recipe for my boyfriend and mother last week. I didn't have any puff pastry, so I substituted Phyllo pastry which seemed to work just fine. I made one small round with raspberry jam in it, and a second larger round with just almonds. Since there were less people then expected, I gave my mom the entire raspberry round, and told her just to eat as much as she wanted. After going on about how it was "WAAAY too much for her" she ate the entire thing! Similiarly, my boyfriend ate his entire half of the almond round, and then took the rest of my portion! He said it was the best thing I've ever made. I will be making this recipe again this week, by request.
