Jam Filled Butter Cookies

Reviewed: Dec. 10, 2007
I was craving a good jam filled cookie so I made these yesterday. These are very easy turned out great. I used whole wheat flour, added 1.5 tsp of vanilla, and 1/4 tsp of salt. For the jam I used organic strawberry preserves, they were all gone within a couple hours!

good tasting smoothie. since trying this recipe i've discovered you can add spinach to almost any fruit combo and not taste it at all, I also add 1 tbs flax oil and a scoop of protein.

THis is ok and very easy but for the little extra time it takes to make I'd recommend the apple enchilada dessert also on this site.

Chili Rick's

Reviewed: Dec. 9, 2007
Terrific chili! Loved everything in it. Used super flavorful blackforest bacon from Whole Foods, grass feed ground beef, and spicey chicken sausage. I did cut the bbq sauce back by half and also added half a shiner bock beer.

Southern-Style Meat Sauce

Reviewed: Nov. 12, 2007
WOW this was good!!! I would give it 6 stars if I could. If your a lover of spicey things than this sauce will be your favorite of all time!! I made this last night for dinner, it was incredible! Here's the only things I changed up...I used 1 lb grass fed ground beef and 1 lb ground buffalo (great quality meat makes all the difference). Sauted the onions and garlic in a non stick pan with no oil then added to fully cooked meat. Instead of tomato paste I used 2 cans diced italian tomatoes, fresh mushrooms instead of canned and I was worried about adding the full 2 TBS red pepper flakes based on other reviewers adding 1 and saying that was more than enough so I added 1 1/2 TBS and it was great I think it would be delicious with the full 2 TBS but you do really have to like spicey which we do. Added a shake of garlic powder along with the other spices and I let it simmer for over 2 hrs just because that makes it so flavorful and the meat so tender. Served it on top of whole wheat spagetti with a side of whole wheat beer bread to sop up the sauce, PERFECT! This would also make an awesome lasagna sauce or if you keep the recipe as is with the tomato paste it would be a great pizza sauce. If you love a little kick to your food I HIGHLY recommend trying this recipe!!!!!! OOps almost forgot...I cut the salt by half.

Glazed Meatloaf II

Reviewed: Nov. 7, 2007
I don't really LOVE meatloaf but this was really good. The changes I made were...I used regular mustard because I didn't have any other and in place of bread I used oats, I used another reviewers suggestion for replacing the bullion cube with 1 tsp worchestire sauce, garlic powder, and dash of tabasco (great suggestion). This turned out so flavorful and moist. This glaze makes all the difference you'll want to be sure to double the glaze, it's that good and do 1/2 c ketchup and 1/2 c bbq sauce instead of all ketchup. YUMMMMM!

Mexican Shepherd's Pie

Reviewed: Oct. 31, 2007
I made this last night for dinner and it was very tasty!! I used Bobs Red Mill stone ground cornmeal muffin mix instead of corn muffin mix and it made plenty for a 9x13 pan. I used 1/2 c salsa in place of water, mixed in one can of black beans with the cooked meat/onion/tomato/seasoning mixture, added a thin layer of the cornmeal mixture on the bottom of the pan, topped with meat and bean mixture, added a layer of pepperjack cheese and some sharp cheddar then topped with remaining cornmeal mixture. I topped with the olives the last 15 min of baking time. I don't know if it's because I used a different cornmeal mix or just more of it but I did have to increase baking time to 45 min and had to drop oven temp to 350 after 30 min to prevent the edges getting to brown. This was great topped with salsa and sour cream!!

Apple Pie Filling

Reviewed: Oct. 27, 2007
Delicious!!! I made this per instructions except I only added 6 cups of water which was plenty. I froze some and used the rest for filling in apple enchiladas recipe from this site and it was amazing!! This would also be great on pancakes or even topping for vanilla ice cream. I hate the taste of canned filling, ick!! This was so worth making it instead!!!
