About this Cook
Uni student with a passion for cooking. I'm Swedish but have lived in England and Germany, so like to cook a bit of everything.
My favorite things to cook
Flavoursome pasta sauces, cous cous dishes, curries, lasagne... Pretty much live off tasty salads all summer, yum! I've been a vegetarian for a few years now, and am always looking for new veggie recipes to try.
My cooking triumphs
Catering my sister's wedding. It was a vegetarian buffet for two dozen guests (with various allergies, diets, etc) and I only arrived in the country five days before the wedding... But I managed, and some of my favourite kitchen memories are from those hectic days.
My cooking tragedies
Over the past few years I've moved country three times, and it's a (food) disaster every time. Learning the new names, what is and isn't available (and how to get hold of what isn't!).. And even if you do get hold of the products you need, they end up being slightly different anyway and the whole thing is ruined.

Cinnamon-Peach Cottage Cheese Pancakes
Super tasty (and relatively healthy)! I needed to use up some cottage cheese, and found this recipe. I only had about 1/2c of cottage cheese, so halved the recipe, which still yielded 12 relatively big (3-4" diameter) pancakes. I didn't have any peaches, so used a small apple, shredded, instead (like other reviewers suggested) - which came out really well with the cinnamon flavour. To make it healthier I mixed in 2tbps of flax seed with the egg mix. The cottage cheese gave the pancakes a light texture, and I will be using this as a staple recipe for pancakes from now on! We ate the pancakes with some Greek yoghurt and a bit of honey on the side. Then scattered about a tbsp of flaked almonds to finish it off - lovely!

Sausage Casserole
Very tasty recipe - perfect for a late brunch! The texture was a bit different, but really nice. I divided this recipe to make 4 portions (according to the recipe) but was really only enough for two adults (with only a little bread, cheese and veg on the side). As a side dish, it might last longer. I pretty much followed the recipe exactly, except using vegetarian sausages (which don't 'crumble' as such, so I just chopped them into smaller pieces) and adding some seasoning and dried sage to the egg mix before pouring into the dish. When I do it next time, I will add even more seasoning. If it's for a main meal, I'd even try adding some halved cherry tomatoes to the mix. I had some on the side and the flavours worked well together. I'd also use more shredded potatoes to create a thicker layer around the edges. All in all, a great recipe though which will definitely be used again!

Vegan Cupcakes
Really amazing vegan cupcakes (and I've made plenty before!). I couldn't find my cupcake tray, so had to settle for making flatter fairy cakes instead. But they came out very nice and moist. They didn't rise very much (This is always a problem with vegan cakes.), but when they're that delicious I didn't really mind. I used regular sunflower oil instead of coconut oil, soy milk instead of almond milk, and white wine vinegar instead of apple cider vinegar. Absolutely delicious cupcakes, that I will be making for years to come. Thank you for the recipe!
