Slow Cooker Carolina BBQ

This Yankee girl LOVES this recipe! I was only acquainted with Carolina BBQ a few years ago and really liked it. This recipe is perfect. It is very spicy which I like, but be careful if serving to a crowd - especially like people in Minnesota who seem to prefer things very bland. Put some of this on a yummy bun, add a little cole slaw and it's an immediate picnic. Thanks for submitting this recipe!

Asparagus Swiss Quiche

This was a excellent quiche! I did splurge and use Swiss Gruyere cheese which was really yummy. When I do it again, I will saute the onions with the bacon and calm their flavor a bit. I also added more eggs and 1/2 and 1/2 and added red peppers to the top for more veggies and garnish. With the bacon and the cheese, I would eliminate adding any extra salt next time.

Mexican Shrimp Cocktail

This is a FABULOUS hot weather meal! I halved the recipe. Used spicy V8 juice and used more than was called for. I used one pound of shrimp - added more cilantro, garlic onion, lime juice and hot pepper sauce than called for. I also added finely chopped peeled cucumbers which really add to the refreshing texture of this dish. I put in one avocado when I made it (and let it sit overnight) and then added another one when serving. Served it with a lime wedge, cilantro sprig and tortilla chips and fresh cantaloupe.

Chinese Chicken Salad II

I made this today and it was a great hot weather salad to have with leftover rotisserie chicken that I got at the grocery store earlier this week. I added about 1 T of sesame oil to the oil and also used 1/2 olive and 1/2 veg. oil (using the tablespoon of sesame oil to fill up the 1/2 c. I used rice wine vinegar. I added a large can of mandarin oranges and pea pods (cut in half). I used rice noodles instead of chow mein noodles. If I had ginger on hand, I would have grated some in the dressing. I think I'll leave the poppy seeds out next time. They really don't add much. This was a very nice salad!

Lime-Tarragon Grilled Chicken

Great chicken dish! I used boneless, skinless thighs and will try it with boneless, skinless breasts next time. I may add a bit of chopped garlic to the marinade but otherwise, I wouldn't change anything. It was excellent!

Navy Bean Soup I

Very good flavorful soup. I used a ham bone and cooked everything together. Removed the bone and fat at the end of 2 hours. Used chicken stock in place of the water and also added carrots, more fresh garlic(didn't use the powder) and onions. I used fresh parsley too. Also added liquid smoke and 4 T. of cider vinegar at the end. I didn't add anymore ham as there was quite a bit on the bone and I also did not add 3 more cups of water - probably just added another cup of chicken stock.

Nana's Beef Stroganoff

This was one of the best stroganoff recipes I've ever tried. I just shared some leftovers with a coworker and she agreed. I did add some balsamic vinegar to the stock mixture and I added more than the called for beef stock as the roux was too thick without it. Very, very tasty!

Raspberry Almond Coffeecake

This was the first time for this recipe for me and it won't be the last! It has great flavor. I doubled the recipe and used 4 c. of fresh raspberries. I added 1/4 c. of milk and used 1 t. vanilla and 1 t. almond in the cake batter. Instead of sour cream, I used plain vanilla yogurt. I toasted pecans and put those on the top. It was baked in a 9 inch springform pan which was just a perfect size. It needed more than 40 minutes with the extra raspberries so I added almost 10 more minutes of baking time. I did glaze the top since it's a very small amount of glaze and served it with a scoop of vanilla ice cream. It was a hit!

Hunts® Tomato and Bacon Tortellini

This is very tasty and is a wonderful, quick one-pot meal! I added a whole chopped onion and let that sweat out with the garlic. I topped it with some grated Parmesan-Reggiano cheese. You could also top it with some chopped fresh basil.

Tangy Cucumber and Avocado Salad

This was fabulous and received rave reviews where I brought it. I followed the directions exactly and added one roma tomato and a splash of balsamic vinegar. Next time, I'm going to make it as a salsa and add a jalapeno or serrano pepper and chop the ingredients a little finer.

Cheesy Onion Focaccia

This is an excellent tasting focaccia. I did have to add at least another 1/2 c. flour after the dough cycle was done in my machine. I used 2 onions and carmelized those and added garlic at the end. I also added dried basil to the dough. I sauteed my onions and garlic in olive oil. I also topped it with thinly sliced tomatoes and sliced basil leaves. Also did divide the dough and made two smaller pieces. I'll definitely make this again!

Chicken and Red Bean Enchiladas

This was really good - a keeper that I'll make again. I did use a rotisserie chicken and that was the perfect amount. I used a can of mild enchilada sauce and added some chicken broth to that as well as chopping up a couple chipotle chiles in adobo sauce and adding to the sauce and onions. Using a 9x13 pan, I got 10 enchiladas. If you use a larger lasagna pan, you could get 12. I also combined the pepper jack cheese and co-jack for a little more flavor. To top it off, I used chopped cilantro and chopped green onions.

Sarah's Banana Bread Muffins

I enjoyed these muffins as well. I used 1/2 white sugar and 1/2 brown sugar. Added an overflowing teaspoon of vanilla, a teaspoon of cinnamon and about 1/2 c. of coconut along with the walnuts. They baked in about 20 minutes in muffin cups. I'll definitely make these again!

Sensational Sirloin Kabobs

This was just excellent! I doubled the marinade and remembered the 1/2 c. to save back for basting. I used fresh garlic instead of the garlic powder and salt. I also marinated the veggies in a sesame honey ginger dressing I had on hand. Used red and yellow peppers and did not blanch them. Replaced the mushrooms with zucchini as I made the Gourmet Mushroom Risotto as another user did (recipe on this site). I didn't use tomatoes because when you try to get those off a skewer when they are hot, it's messy. I'll definitely make these again.

Caribbean Chicken Salad

WOW! This is a GREAT salad! I followed the recipe pretty much as written but did add some lime juice and minced garlic to the salsa and put more lime juice in the dressing as well. I used a bit more jalapeno and more cilantro too. The flavors and texture combination is just perfect. I will make this again!

Risotto with Sun-Dried Tomatoes and Mozzarella

This is a great risotto recipe! I do agree that the mozzarella is a little peculiar and I would probably not use it next time. I used 4 c. of chicken stock and 1 1/2 c. of white wine and it was just right. As others did, I also added some garlic. I also didn't have sun dried tomatoes but I did have a sun-dried tomato pesto sauce so I used that and it tastes wonderful. I didn't use much salt as there is salt in that sauce. I added grilled chopped chicken breast pieces for a perfect meal. I would definitely make this again. It would be a great side dish without the meat to accompany any grilled meat.

Sweet-Sour Red Cabbage

This was the best sweet and sour red cabbage I've ever had. I added some caraway seeds at the end but did not really alter the recipe otherwise. It was just excellent!

Potato Soup IX

This is an excellent recipe. I also added some onion powder, garlic salt (in place of any other salt) and some seasoned salt and a couple dashes of cayenne. I added a couple strips of chopped up bacon for the meat eater in the family and topped it with grated cheddar cheese, green onions and parsley. I also thickened it with some mashed potato flakes. It was really good!

Hot Pizza Dip

Very tasty and quick to put together. I added garlic powder to the cream cheese mixture. I did not use green peppers and I did use turkey pepperoni mini's which I microwaved briefly to get any extra grease out. Also topped it with a bit more mozzarella. I will make this again.
