Bacon Ranch Pasta Salad

What a great pasta salad! I used pitted kalamata olives cut in half in place of the black olives and added some chopped red onion. This is one of the best pasta salads I've ever made and I've made a lot of them. Thank you for sharing this recipe!

Potato Soup IX

This is an excellent recipe. I also added some onion powder, garlic salt (in place of any other salt) and some seasoned salt and a couple dashes of cayenne. I added a couple strips of chopped up bacon for the meat eater in the family and topped it with grated cheddar cheese, green onions and parsley. I also thickened it with some mashed potato flakes. It was really good!

Sweet-Sour Red Cabbage

This was the best sweet and sour red cabbage I've ever had. I added some caraway seeds at the end but did not really alter the recipe otherwise. It was just excellent!

Italian Sausage Soup with Tortellini

This is excellent! What a great winter soup that is flavorful, colorful and yummy! I did use 6 c. of beef broth and omitted the water. I used 2 cans of diced tomatoes with the juice. I didn't have tomato sauce but it was good without it. I also added more chopped basil on top of the parmesan when I served it. This is a keeper!

Slow Cooker Carolina BBQ

This Yankee girl LOVES this recipe! I was only acquainted with Carolina BBQ a few years ago and really liked it. This recipe is perfect. It is very spicy which I like, but be careful if serving to a crowd - especially like people in Minnesota who seem to prefer things very bland. Put some of this on a yummy bun, add a little cole slaw and it's an immediate picnic. Thanks for submitting this recipe!

Risotto with Sun-Dried Tomatoes and Mozzarella

This is a great risotto recipe! I do agree that the mozzarella is a little peculiar and I would probably not use it next time. I used 4 c. of chicken stock and 1 1/2 c. of white wine and it was just right. As others did, I also added some garlic. I also didn't have sun dried tomatoes but I did have a sun-dried tomato pesto sauce so I used that and it tastes wonderful. I didn't use much salt as there is salt in that sauce. I added grilled chopped chicken breast pieces for a perfect meal. I would definitely make this again. It would be a great side dish without the meat to accompany any grilled meat.

Beer and Brown Sugar Steak Marinade

This was a great marinade. I put everything together in the morning and marinated the steaks all day. I used Moose Drool Ale. The meat was really flavorful and tender. I may try zesting it up a bit next time.

Caribbean Chicken Salad

WOW! This is a GREAT salad! I followed the recipe pretty much as written but did add some lime juice and minced garlic to the salsa and put more lime juice in the dressing as well. I used a bit more jalapeno and more cilantro too. The flavors and texture combination is just perfect. I will make this again!

Roasted Vidalia Onions

These were SO good! I put mine in foil on the grill and roasted them for 45 minutes - that was just right. I also added minced garlic to each one and put some Baby Swiss cheese on after they were grilled. A perfect side dish to the country style pork ribs we had!

Sensational Sirloin Kabobs

This was just excellent! I doubled the marinade and remembered the 1/2 c. to save back for basting. I used fresh garlic instead of the garlic powder and salt. I also marinated the veggies in a sesame honey ginger dressing I had on hand. Used red and yellow peppers and did not blanch them. Replaced the mushrooms with zucchini as I made the Gourmet Mushroom Risotto as another user did (recipe on this site). I didn't use tomatoes because when you try to get those off a skewer when they are hot, it's messy. I'll definitely make these again.

Gourmet Mushroom Risotto

A wonderful risotto! I followed the recipe pretty much although only used 1 1/2 pounds of mushrooms and that was plenty. Only added 2 T of butter and probably 2/3 c. of parmesan cheese. Everyone raved about this. It takes much longer than 15-20 minutes to stir and absorb all the liquid in - it was more like 45 minutes.

Jamie's Cranberry Spinach Salad

GREAT salad! I served this with Sensational Sirloin Kabobs and Gourmet Mushroom Risotto all from this site. I did use 1/4 c. sugar but would cut it down to 1 or 2 T. when I make again. Used peanut oil as well. I didn't add the cheese to it but it would be good with a chevre, blue or any other kind of crumbled cheese you may like. The toasted almonds really add a lot and I did them on a sheet pan in the oven with no butter. Next time, I'm going to use field greens or baby lettuce. This is a keeper!

Asparagus Swiss Quiche

This was a excellent quiche! I did splurge and use Swiss Gruyere cheese which was really yummy. When I do it again, I will saute the onions with the bacon and calm their flavor a bit. I also added more eggs and 1/2 and 1/2 and added red peppers to the top for more veggies and garnish. With the bacon and the cheese, I would eliminate adding any extra salt next time.

Sarah's Banana Bread Muffins

I enjoyed these muffins as well. I used 1/2 white sugar and 1/2 brown sugar. Added an overflowing teaspoon of vanilla, a teaspoon of cinnamon and about 1/2 c. of coconut along with the walnuts. They baked in about 20 minutes in muffin cups. I'll definitely make these again!

Raspberry Almond Coffeecake

This was the first time for this recipe for me and it won't be the last! It has great flavor. I doubled the recipe and used 4 c. of fresh raspberries. I added 1/4 c. of milk and used 1 t. vanilla and 1 t. almond in the cake batter. Instead of sour cream, I used plain vanilla yogurt. I toasted pecans and put those on the top. It was baked in a 9 inch springform pan which was just a perfect size. It needed more than 40 minutes with the extra raspberries so I added almost 10 more minutes of baking time. I did glaze the top since it's a very small amount of glaze and served it with a scoop of vanilla ice cream. It was a hit!

Lime-Tarragon Grilled Chicken

Great chicken dish! I used boneless, skinless thighs and will try it with boneless, skinless breasts next time. I may add a bit of chopped garlic to the marinade but otherwise, I wouldn't change anything. It was excellent!

Roasted Beets with Feta

Made this pretty much as listed. I "eyeballed" the dressing ingredients and used a bit more of everything. It was very tasty and pretty. Will definitely make again. (And will add a bit of minced garlic next time!) Update: I use garlic and onion in place of the shallots. I just made these for someone who said she didn't like beets and she went back for seconds! Definitely toast the walnuts and sprinkle them over the cheese before serving.

Chicken and Red Bean Enchiladas

This was really good - a keeper that I'll make again. I did use a rotisserie chicken and that was the perfect amount. I used a can of mild enchilada sauce and added some chicken broth to that as well as chopping up a couple chipotle chiles in adobo sauce and adding to the sauce and onions. Using a 9x13 pan, I got 10 enchiladas. If you use a larger lasagna pan, you could get 12. I also combined the pepper jack cheese and co-jack for a little more flavor. To top it off, I used chopped cilantro and chopped green onions.

Foolproof Rib Roast

This is a perfect way to do a rib roast. However, you have to plan your other dishes if you only have one oven. I rubbed the roast with olive oil and then the seasonings. Next time, I'll do the second segment of cooking for one hour. It was a bit too rare for me but otherwise, just delicious! I did add beef stock to the bottom of the pan before baking but it pretty much just evaporated.
