Garlic Mashed Red Potatoes

I love th idea of cooking fresh garlic first. I made as written but will make the following changes next time. I will roast or sauté the garlic instead of boiling. I like that 'browned' flavor. I will use a bit more milk and a smidge more butter. I will up the salt a bit and leave out the Parmesan when I don't want that flavor. Very important....don't over mash. Red potatoes have more starch and get goopy quicker. I break up with a big spoon first and mix/mash as minimally as possible.

Simple Marinara Sauce

Love this sauce. Parmesan adds right amount of saltiness and adjusting the garlic to our liking did not disrupt the balance.

Golden Granola

So so good! I made two slight changes to meet my family's needs. I used flax seed instead of sesame seeds and I used all chopped pecans instead of sunflower seeds and almonds. I would also do 1/2 almonds and half pecans. This is light and delicious. My kids love it on greek yogurt!

French Toast Casserole

Holy Cow! This was fabulous. I used egg bread and used a 9x13 pan. It was not as eggy this way but had the texture of french toast. Not a morsel left on Christmas morning. Edit on Jan 3...I forgot to say I added 1t of cinnamon to egg mixture and put it together the night before so it soaked up the batter overnight. Hope this is helpful.

French Canadian Tourtiere

Excellent! Per suggestions I added 1 teaspoon cinnamon and decided to use beef broth instead of water. I thought my filling was a little watery so I drained meat, reserving the liquid. Set meat aside and in pan I used 1T butter melted and 1T flour to make a rue. Added back liquid and cookded until thickened. Mixed back into meat and then follwed recipe. My daughter took to school for a heritage project where she told about her French Canadian heritage and their Christmas traditions. It was a huge hit.

Wow! This turned out perfect! I am not a pro, but I had 3 people ask me if they could hire me to make it for them. I frosted to look like a log. Added fondant holly. Beautiful!

Pumpkin Wheat Honey Muffins

These are very good and very moist for using whole wheat flour. Only a couple of changes. I used canola oil, upped the pumpkin to 1 cup, used 2 teaspoons of pumpkin pie spice, and left out the nuts. Baked them for almost 17 minutes. If you are on WW they are 6 points if you make 12 standard size muffins.
