Rattlesnake Pasta

N*R, very tasty. The only change I made was to not dreg the chicken in flour and because I like spice, I seasoned the chicken with a 1/4 tsp of the cajun seasoning. I would say to add more veggies and if you want sauce you need to add more cream as 1 cup is not enough. I use 2 cups of cream with 3/4 box of the fettuccine. All in all it is worth making and I will be making this again, it is a quick week night recipe.

Gorgonzola-Garlic Dip

This dip was great. Spread on Tostitos. Spread straight from fridge. I was out of Red Wine Vinegar so I used Balsamic Vingegar. This would also be wonderful on top of a burger. It has lots of possibilities.

White and Wild Rice Pilaf

This has great potential but lacks a bit of seasoning, I used chicken broth instead of veggie broth figuring that would help but it wasn't enough. I also added thyme garlic and onion powder. I will have to play with this recipe.

Apple and BBQ Sauce Baby Back Ribs

These were really tasty and easy. I added different seasoning to the ribs, also after marinating them overnight, I cooked them in the oven at 295 for about 2 hours and put them on the grill for about 15 minutes. I did find they needed a little BBQ sauce on them when the came off, but this is my new way to make ribs, nice and tender.

Brazilian Chicken with Coconut Milk

This has great flavor. A new chicken favorite for my household. Nice amount of spice, although I only used 1 pepper. To complete the meal, I made the Brazilian rice from this site and string beans. The combination of the rice and string beans helped with toning down the spice, but a great meal nonetheless.

Upside-Down Coffee Cake

I made this this weekend and it was a hit for my 18 year old son who doesn't like sweets and my boyfriend who does. I read the reviews and decided to make it in two pans, it came out good but would have been ok to make in one pan. I think my pan is deep enough to support the full amount. This is a keeper.

Outstanding, my BF ask how could someone rate this as not good tasting. Cheese and apples, how can you go wrong. The herbs just put it over the top. Thanks for a great recipe.

Peach Muffins

Wow these were great, I used fresh strawberries instead of peaches becuase that is what I had on hand, I still used the pecans. They were terrific, can't wait to try with peaches. I think you could interchange any fruit. The strawberries were fresh. I just slice and put a little cinnamon and sugar on them while making the batter.

Mom's Zucchini Bread

Woza this is terrific. I brought zucchini just to try this. I took the advice of some reviewers and increased the zucchini to 3 cups and added the oat topping after letting it bake for about 15 minutes. You would never know it had veggies in it.

Make Ahead Manicotti

This is sooo tasty. I added lots of sauce and seasoning to the sauce because I just don't like sauce straight from the jar. But WOW, I will make this more often. I made the manicotti on Tuesday afternoon and cooked it Thursday evening. You have to try it. I put parm and mozzarella on the top.

Baked Beans, Texas Ranger

Rosemary Marinated Lamb Chops

These were ok, the dressing on the side was the best. I think the lamb needed a little more flavor. Lamb is one of my favorite meats. Cook time as also off. I marinated for about 8 hours. I will make again with some changes, for instance adding salt and pepper to the meat and making more of the marinade to cook on the side.

Orange Blueberry Muffins

Very good, I used lemon zest instead of orange as that is all I had, other than that followed recipe as written. I would fill muffin pan to full next time as I like big muffins.
