Perfect Baked Potato

The title is correct. I used coarse kosher salt and my own fillings, this is the way to bake a potato.

Mom's Zucchini Bread

Woza this is terrific. I brought zucchini just to try this. I took the advice of some reviewers and increased the zucchini to 3 cups and added the oat topping after letting it bake for about 15 minutes. You would never know it had veggies in it.

Bourbon Pecan Chicken

This is restaurant quality... Make sure to use clarified butter, it will keep it from burning. The only change I made was to use only 1/2 c of unsalted butter instead of 3/4 c.

Salsa Chicken

Here goes another great review. Very simple and tasty. I split my chicken breast so they would cook faster. Seasoned both sides with the taco seasoning, baked for 20 minutes then added the salsa and cooked 5 minutes more, added cheese i used the shredded mexican mix, served over rice with a little of the juice and topped with sour cream. Quick fast and tasty, great weeknight meal.

Make Ahead Manicotti

This is sooo tasty. I added lots of sauce and seasoning to the sauce because I just don't like sauce straight from the jar. But WOW, I will make this more often. I made the manicotti on Tuesday afternoon and cooked it Thursday evening. You have to try it. I put parm and mozzarella on the top.

Beer Butt Chicken

This is the best, I will never just bake a chicken again. I used Dr. Pepper instead of beer and changed the seasonings to meet my taste. Baked in the oven at 350 for about 2 hours in a special pan designed to cook the chicken like the recipe. You must try this.

N*R, very tasty. The only change I made was to not dreg the chicken in flour and because I like spice, I seasoned the chicken with a 1/4 tsp of the cajun seasoning. I would say to add more veggies and if you want sauce you need to add more cream as 1 cup is not enough. I use 2 cups of cream with 3/4 box of the fettuccine. All in all it is worth making and I will be making this again, it is a quick week night recipe.

Carry Cake with Strawberries and Whipped Cream

I was not impressed at all, total waste of money, ingredients and time. The cake was very sweet and the topping never formed. I ended up throwing this out. I am in search of the perfect strawberry shortcake and this is far from it. It may taste ok with a chocolate frosting, but nothing that is to sweet as the cake is sweet enough.

Chicken and Bowtie Pasta with Asiago Cream Sauce

This was a good recipe. I had left over chicken from the ranch kabobs I made the previous night, so I used that and instead of prosciutto, I used pepperoni. I also had left over mushroom and squash that was just grilled with salt, that I added. Very good and made a nice meal without feeling like I was eating left overs.
