Chicken Enchilada Dip

It didn't look to appetizing, but once everyone tried it they raved about how good it was. I made it for our Superbowl party. I followed others suggestions and marinated the chicken overnight in mix and then cooked it the next day in a skillet (I added some of the marinade to the pan while cooking it). I also added two cans of chilis and only used half mayo and the other half sour cream. I put it together that morning then refrigerated it - baked it later with some other goodies. I have been asked by my brother to please make this again for a family gathering.

Mouth-Watering Stuffed Mushrooms

I made these for Christmas dinner and everyone loved them. I doubled the recipe and added (as some others suggested) 1 can of crab meat and a scant 1/4 cup of seasoned breadcrumbs. I think I would leave both the crab and breadcrumbs out next time. I couldn't taste the crab but others said they could. I also put the mix into a ziplock bag and cut the corner off to pipe into the shrooms. Worked great. I will definitly be making these again.

Jamie's Cranberry Spinach Salad

I served this for Christmas dinner. Everyone really liked it. I thought it was just O.K. but since it seemed to be such a hit I'll make it again. My mom asked for the recipe for one of her ladies lunches. I also added a can of drained mandrin oranges. It is a very pretty salad.

Beef Tenderloin With Roasted Shallots

The sauce was wonderful. We had it over grilled New York Strips for Christmas dinner. I did as someone else suggested and chopped the shallots. I roasted them and refrigerated the day before.I also made and reduced the broth mixuture the day before. The broth/wine mixture actually tasted better the next day. I put it all toegther while the steaks were on, on Christmas day. Everyone really loved the sauce. Will definitly be making again.

Cranberry Salad III

I made homemade cranberry sauce instead of the canned stuff. This was really wonderful. Everyone loved it and asked for recipe. I also made a second batch using homemade cranberry sauce made with sugar twin sweetner and sugar free jello. It was actually better than the regular recipe. It was more tart and not nearly as sweet. Will definitly make both again!

Slow Cooker Stuffing

THis is a great recipe! My family has made it for the last several years. We fry our turkey, which is an absolutely fabulous way to fix turkey, but I have always missed that wonderful smell of turkey and stuffing cooking in the house. This smells wonderful while cooking. Also it frees up so much oven space for everything else. It is really mosit - so you don't miss cooking it in the bird.

Bacon and Tomato Cups

Filling was really tasty! I was pressed for time so I used Pillsbury Grands Flakly biscuits and split them apart and put them into full size muffin tins(like someone else mentioned). Everyone loved them at our BBQ. Next time I think I would try it on cocktail toast squares, english muffins or those small phyllo shells available in freezer section of grocery. The possiblilties are endless as far as what to spread the filling on or in - the filling is what this recipe is all about!!

Zucchini Patties

Bless you Sherlie!!! I've finally found a veggie dish my kid will eat (with gobs of ketchup)!! I made these ahead and froze them on wax paper lined (sprayed lighlty w/ cooking oil) cookie sheet. I made half of the recipe without onion for my little one. Next time I think I'll make them with montery jack cheese and a diced hot pepper or pepper flakes added. I did make sure to get out as much water as possible like everyone recommended - these were very crisp.

Baked Tomatoes Oregano

This is really good! But it definitly does not taste like pizza. If you like tomatoes this is definitly worth trying. I didn't make the recipe exactly as stated. I sprinkled on parmesan,then garlic salt/pepper,then sprinkled on dry Italian bread crumbs, sprayed with tops lighly with cooking spray (olive oil) then sprinkled on oregano. My husband loved them and ate almost the entire pan by himself. I plan on passing this recipe out to friends and family soon.

Blue Cheese Burgers

Excellent!! Used only two pounds of lean ground beef. Didn't have fresh chives so used 1/4 cup of dried. Also added a little more hot sauce and worcestershire to spice it up. If you love blue cheese this recipe is for you!

Cherry Tomato Salad

We LOVE tomatoes and didn't care for this at all. The ingredients sounded wonderful and full of flavor on their own - but came out sort of bland tasting in this dish. I even added more red wine vinegar and garlic salt, but it didn't seem to help. We liked the concept (esp. with a garden full of cherry tomatoes) but I think I'll try a different vinegarette next time.

Swiss Vegetable Medley

I have been making this for years. You can also make it with cheddar cheese soup, sharp cheddar cheese and omit the fried onions - kids seem to like it better. On the orginial version I also add a can of sliced mushrooms, drained. Low fat soups and sour cream work just as well as the high fat kind - just not as rich tasting.

Yuck!! I have had similar recipes that I really liked. I must have done something wrong because this was awful!! Threw most of it out after nobody would eat it. Don't know if I'll try it again or not.

Mandarin Orange Cake I

OK. What's with this recipe? I made it twice. The first time I thought I made it wrong. The second time I even used a lemon cake mix and added orange extract to punch up the flavor. And while the icing was O.K. I hade to add a packet of unflavored gelatin to thicken it up - was way to runny. I made it for a family party and the reaction was so so. My entire family and husband's family are foodies - and no one asked for a copy of this recipe. Try Bev's chocolate pie recipe- now that's something good!

Bev's Chocolate Pie

This was very easy to make. I used the refigerated pie dough,whip cream for the topping and shaved chocolate curls over the top. It was very good and rich. Everyone one at the party loved it. I did have to dump the mixture out of the saucepan and wisk it to get the flour lumps out. Would recommend to anyone who loves chocolate!
