Spinach and Feta Pita Bake

Reviewed: May 21, 2010
AMAZING! What a nice change for dinner. So light - you are satisfied, but not so full you are uncomfortable. I added artichokes because we love them. That is the only thing I changed. Will make again - for sure!!

Mike's Mushroom Bread

Reviewed: May 12, 2010
We had this for dinner last night and I made a couple minor changes. I sauteed the shrooms, garlic, and green onions before adding to the bread. I will saute a little longer next time because the mushrooms were still a little raw. Next time I will add a little more garlic and some other spices. Was a little bland, but will make again for sure!

Caramelized Baked Chicken

Reviewed: May 12, 2010
My daughter took the first bite and said "This is the best chicken you have ever made!" I used 1 package of chicken legs so I had to adjust the measurements. I only baked for 45 minutes and turned chicken over half way through. I will make again, but will cover my dish with foil before baking. I have a huge, sticky mess to clean up in the pan!! Thanks for the recipe!

Boneless Buffalo Wings

Reviewed: Apr. 23, 2010
We had these last week and I forgot to review. They were so good! I baked them to save the calories, but who am I kidding - we are going to deep fry them next time. I didn't like that the breading was not crisp. I kept a couple plain for the girls and my husband and I had ours dressed with hot sauce. They taste just like your local bar or hang-out. Great recipe!

Cream Cheese Jalapeno Hamburgers

Reviewed: Apr. 23, 2010
I used herb and garlic cream cheese and added a couple extra spices. Very nice change to the basic, plain ole' burger. They were a little messy, but well worth it. Had to make sure I sealed the edges good or the yummy cream cheese goodness will ooze out! Will make again.

I agree with another review - my crust was not crunchy. I will make it again though! I loved the mustard/honey marinade. The sauce is a keeper too! Great recipe Kathleen.

Minestrone Soup I

Reviewed: Jan. 12, 2010
Will make again. Very good flavor. I didn't find it bland at all - just adjust the seasoning to your taste. I used kidney beans because that is what I had on hand. Nice, warm your tummy, soup!

Fatoosh

Reviewed: May 8, 2009
Can I add stars? AMAZING!!! It's just like the middle eastern place I order out from. I only used 1 tbs of sumac because it is very strong. I can't wait to make more! Thanks so much for the recipe. I had a co-worker pick up the spice at her local arabic grocery store since I can't find it near my house.

Lemon Orzo Primavera

Reviewed: Apr. 24, 2009
You HAVE to try this one! I followed a couple other people and added the veggies half way through so they wouldn't get mushy, but otherwise, followed the recipe as is. Everyone loved it. It was a great side to a light meal. I served it with fish/pork chops and steamed broccoli. I will make this again -- for sure!! Thanks!

Slow Cooker Chicken and Dumplings

Reviewed: Mar. 30, 2009
Gave 4 stars because I made a couple changes. I used chicken broth instead of water, used cream of chicken and celery, added veggies, and used 1 can of biscuits instead of 2. Make sure to use low sodium broth -- very salty! I cooked the dumplings for 1 hour and they could have cooked longer. Nice comfort food. Will make again, but I will cook the dumplings longer.

Ginger Glazed Mahi Mahi

I made this for my hubby. He seemed to like it - I couldn't tell if he was just trying to make me feel better! I tried a bite and the glaze was very good. I think I would try on a different fish next time.

Banana Peanut Butter Bread

Reviewed: Feb. 8, 2009
Nice taste - I made 2 changes -- used 1 3/4 cups flour as others suggested and used chunky pb. I only had to bake mine for 75 minutes. Hubby loved it and he isn't a fan of peanut butter. I ended up using 4 1/2 bananas. Will make again!
