Easy Garlic Broiled Chicken

Great, flavorful chicken that couldn't be easier! I used bone-in thighs, but removed the skin. I followed another reviewer's recommendation to bake at 375 for 35 min (turning & basting once), then broiling for 5 min on each side (basting each time). I wasn't sure it would be so flavorful without marinating, but it was delicious!

Hands down, the best mashed potatoes ever! I also used red potatoes, so I left the skin on. And, I used reduced fat cream cheese...delicious!!

10 Pound Cheesecake

Easy and delicious! Made it for a 4th of July party today, so instead of cherry pie filling, I made it look like a flag with fresh blueberries and strawberries on top. Everyone at the party loved it!

Chicken Tortilla Soup V

Very good! Made the recipe as is, except that I sauteed the onions first. Also, I recommend doubling the recipe so you'll have leftovers--it goes fast! When it was finished, I topped off my bowl with avocado, shredded cheese, and some crumbled tortilla chips...yum!

Unbelievable Spinach Calzones

4 and a half stars! Very good and easy to vary for different tastes. I had the recipe as is, but made my kids ones with pepperoni in them (and no spinach). Everyone loved them!

Sour Cream Scalloped Potatoes

I used frozen shredded hash browns and it was delicious! I also sauteed the onions before putting them in the potatoes so the onions wouldn't overwhelm it. I made it as a side dish for Christmas ham and my family loved it!

Halloween Bloody Baked Rats

My kids loved it! The only thing I changed was that I added pureed spinach to the meat mixture in order to sneak vegetables into my kids (the red sauce hid it well). It made way more sauce than I needed, but that was fine.
