Banana Oat Muffins

I have said it about banana muffins from this site before but these are my new favorite muffins! I believe its the addition of milk that makes them but they are fantastic. I made no real changes but I did add chocolate chips & shredded coconut (which is a tip from my other favorite receipe on this site). Next time I will make sure that I have applesauce to add for part of the oil but these are great as is... I plan to make these many more times.

Amazing Whole Wheat Pizza Crust

This really didn't work out for me that well... I know it was something I did but I just can't figure out what. The taste was great but it just didn't seem like "pizza crust" to me. I think I need more work with yeast products.

Five Minute Ice Cream

This is a fantastic and quick. It reminds me a lot of soft serve frozen yogurt. I did only give this recipe 4 stars though because I found it way to sweet. Next time we make this (and I know I will make this for years) I will use probably only about 1/4 cup of sugar. I love being able to mix up some homemade "ice cream" and know exactly what went in it.

Peanut Butter Easter Eggs

I made these for Easter and they were awesome but I used MUCH less sugar than called for. I doubled the peanut butter but I am not sure how much I used exactly b/c I just kept adding some until it tasted good. I probably used about 3/4 of a box of powdered sugar instead of the 2 that doubling the recipe would have required. These were a huge hit - everyone loved them.

Chocolate Chip Pancakes

These were very good and very fluffy perfect pancakes but only AFTER I added more milk. The beginning batter was way too thick and I tried to give them a shot since that was the orginal recipe but that pancake went straight into the trash. Once I added extra milk the pancakes were perfect. I did use all whole wheat flour though instead of regular.

Banana Coconut Loaf

Once again I am not sure if I should even review the recipe or not because of the many changes that I made but the 4 stars are for the coconut/banana combination... I love banana nut bread and I love coconut and I have never thought to put the two together??? The combination is delicious! So for those who are interested the changes I made were to use all whole wheat flour, canola oil instead of butter (no cholesterol) and I didn't use the whole amount stated in the recipe, 3/4 cup cane sugar, 1/2 a cup of fat free yogurt instead of two eggs (again no cholesterol), and vanilla extract instead of almond. I now have a much healthier recipe with absolutely no reduction in taste. Thanks!

Irresistible Irish Soda Bread

I was extremely interested in trying this bread because of the lack of yeast which isn't something I have exactly perfected yet and I am so glad that I did! I have tried another Irish Soda Bread recipe and I ended up w/ a hockey puck but this one came out perfectly. This bread is so delicious warm with butter and jam or toasted to go along with soups or stews. I did change a few things based on my own preferences though. I used all whole wheat flour and canola oil instead of butter to cut down on the saturated fat but other than that everything else remained the same. I would highly recommend this bread to anyone because it is fantastic.

Irish Brown Soda Bread

I am not exactly what went wrong here but I ended up w/ a hockey puck. I scaled it down to serve 3 so that it only made one loaf and it did not rise at all... I am not sure what went wrong. I am going to try again though b/c it was incredibly quick and for a hockey puck it doesn't taste 1/2 bad :) I really want a nice hearty and dense bread to go w/ a soup that I have so I will give this another shot.

Best Brownies

I used canola oil instead of butter to help cut down on the cholesterol and whole wheat flour since it is disguised by chocolate no ones the difference. This receipe is delicious! I added in walnuts and semi-sweet chocolate chips just because I love choclate. I also never cook my brownies in a pan because I think there is way to much clean up involved - instead I just cook them in a cup cake pan w/ liners. Absolutely no clean up and all of the pieces are already portioned out.

Apple Pie by Grandma Ople

I don't actually eat apple pie but they people I made this for said it was fantastic. I did taste the syrup before adding it to the apples and added in some cinnamon. The pie was gorgeous though once it was baked and I got compliments on it.

Strawberry Granola Squares

This is very tasty and can be made healthier than the recipe states without losing the fantastic taste. I used quick oats instead of granola because that is what I had on hand and I also used whole wheat flour instead of all purpose. Also once I had my topping reserved I mixed an egg into the bottom portion before baking to help it hold together and not be too crumbly. Next time I am definetly going to add in a bit of salt and vanilla because with my quick oats substitution it lost some of the flavors that actual granola would have. Also next time I am going to try substituting in applesauce instead of the butter to make it that much healthier, the applesauce may also allow me to leave the egg out. I will definetly make this many times again with different sugar free jams because it makes an awesome light breakfast or quick healthy snack.

Banana Oat Muffins

These were really good. This has replaced all other banana muffin receipes including other ones found on this website. Since I like the texture of oats I didn't grind them up. I also replaced 1/2 of the butter with applesauce and used all whole wheat flour. I didn't do the crumb topping but just sprinkled with some decorating sugar and cinnamon. These are really fantastic.

Yia Yia's Tzatziki Sauce

This is absolutely the kind of Tzatziki you will find if you visit Greece. Its awesome - but for those who do feel they need a bit more of a flavor kick try adding some fresh mint or a few shaks of bottled greek seasonings. Also if you are using fat free products remember to drain everything or it will be too thin.

Beef and Bean Chimichangas

I left out so much on this recipe I am not sure I should even rate it but here it goes. I didn't add the oinions, peppers, corn, or taco sauce. I also used the Taco Seasonings 1 recipe from this site instead of only using the spices recommended in this recipe. I also mixed the beans right into the meat and it was creamy enough which is why I omitted the taco sauce. By the time I got to rolling the meat/bean mixture into my corn tortillas I realized the tortillas were too old and kept cracking so I made a layered casserole and baked that way. Served with sour cream and salsa. It was pretty good but next time I am going to make sure I have fresh tortillas because I really wanted chimichangas not a casserole.

Mexican Sour Cream Rice

I thought this receipe was really good and a nice addition to our dinner last night. Based on the other reviews I just mixed in sour cream until it looked creamy but I have no idea how much it actually was and I had no problem with it being dried out. I followed everything else except for eliminating the chilies because I didn't have any and I just don't think the texture of the chilies and the texture of the rice would really work out for me.

Whole Wheat Snickerdoodles I
