Never ever ever make a gooey type cake in a spring pan. All the gooeyness comes out the sides of the pan....why didn't I think of that before attempting the maple syrup gingerbread cake.

Pan Seared Lemon Tilapia with Parmesan Pasta
The pasta was delicious but the tilipia left something to be desired. Even though I more than doubled the seasonings, it was still bland. The seaoning is really important when cooking tilapia because it is such a mild fish. I would not make the fish again, but I will definitely make the pasta as a side with parmesan crusted tilapia (very easy to make: 1/2 C grated parm, 1 Tbsp garlic powder, 1 C panko crumbs, 1 tsp oregano, 1 egg, beaten: dip in egg wash, coat with combined dry ingredients and cook in heated light olive oil over meduim heat 4 min each side).

Baked Chicken Nuggets
This was delicious and fast. I made the recipe exactly as is except for the bread crumbs, I substituted panko crumbs because thats all we have in the house (panko crumbs make a delicious breading). My son thought this was the best chicken he ever had and said "Wow these chicken tenders don't even need ketchup." :) (and that says a lot from him.) I also always bake "breaded" meats on wire rack as this helps to avoid soggy bottoms. Thanks so much for this recipe. It is a keeper! Oh and by the time you are done you probably will have used only about a tablespoon of butter on all of the chicken so don't substitute it, just use it. It really makes the tenders, well, tender! :)

Cinnamon Bun Icing
This was a good cream cheese icing for warm cinnamon buns. I have tried over 30 recipes to try and find the perfect icing and this is almost there. PROS-Spreads easily over warm buns; easy to make while buns are baking; most us have these ingredients at the ready. CON-(there really is only one and it is personal preference) The flavor has a very strong cream cheese taste. I like cream cheese frosting but I don't want to feel like I am eating a bagel. I will try cutting the cream cheese in 1/2 next time.
