Hot Chocolate Mix

An addendum to my review. I found that if you use high quality powdered milk, it's better. I bought Carnation, which was very fine powder, and it worked the best with this recipe. Buying cheap generic store brand powdered milk, which tends to be more granular, doesn't work as well.

Baked Trout Saratoga

If you happen to have leftovers, this recipe tastes even better reheated in the microwave the next day! Be sure to reheat 5 minutes at 50% power for best results.

Fried Rice I

easy to make and good way to use up leftover rice. I tried a couple of modifications. I added frozen brocoli and some sliced fresh carrots. Also added a few shakes to taste of crushed red pepper seasoning. Also tried it with sesame oil instead of vegetable oil. Does give a slightly different flavor.

Dannon BLT Salad

Instead of croutons, I used boiled egg. Then, I added dill weed to yogurt dressing. FANTASTIC! In another version, I took croutons out, and added cumin, chili powder, and Old Bay to the Yogurt. FANTASTIC!

Marinated Chuck Roast

I took a different approach. I did not marinate. Instead, I mixed the ingredients for the marinade, put it in a crock pot, put a chuck roast in the crock pot, and cooked for 5 hours. It was OUT OF THIS WORLD! Use a little flour to thicken the drippings to a gravy that will light up your tongue!

Wonderful Short Ribs

Instead of using tomato sauce, I used fresh tomatoes. I roasted the tomatoes (I used 5) at 350 for 30 minutes, this will put some "flavor" in the tomatoes. Then, you put the tomatoes in the blender and add a splash of Worcestershire sauce (in addition to what is already in the recipe). This was delicious! Of course, this greatly increases the "prep" time.

Flat Iron Steak with Balsamic Reduction

I used dried parsley, I added it during the "vinegar reduction" phase. It works if you don't have fresh parsley. Also, I added onion slices. Cook them at the very last with the "vinegar reduction."

Grilled Shrimp Scampi

I love shrimp scampi, but never tried to make it. Always bought the frozen stuff in the grocery store. After trying this recipe, I will never buy it in frozen foods again! This was very easy. I didn't grill, instead, I stir fried in electric skillet. Used parsley herb instead of fresh, works just as well, but use less. Tried substituting fresh cilantro for the parsley, EVEN BETTER!

Red Potato Salad

I had a bunch of red potatoes to use up, so I was interested in this recipe I had to make due with what I had. Didn't have any chives, but I put dried parsley and dried dill weed, GREAT! Also, I didn't have red onion, just used regular onion. Didn't have cheddar cheese, used shredded parmesean cheese. GREAT! I made it one other time with Cheddar cheese and it's much better. So, use cheddar cheese if you have it, but can use parmesan in a pinch. Oh, definitely use MORE bacon! I used three pieces.

Super Scrambled Eggs Number One

I recommend holding off on the grated cheese until it's almost cooked in the skillet. When you add grated cheese to a beaten egg mixture, then try to "scramble" it, the cheese melts while cooking and prevents the eggs from "scrambling" nicely. I added chunks of compari tomatoes (Costco has these) and liked this combination. Also, the picture for this recipe is somewhat misleading. The picture looks like a layered "egg lasagne." The cooking process used in this recipe won't give you a layered "egg lasagne."

Dee's Roast Pork for Tacos

I am amending my review. When you read the recipe on here, it does say to include the green chilies. However, when I changed the recipe to 4 servings and printed it out, somehow the green chilies got omitted even though they are listed in "ingredients." This recipe works great in crock pot.

Firecracker Scallops

I wasn't successful with this recipe, but I know where I messed up. My scallops were frozen. When I put them into the bacon grease/butter/Garlic powder pan, it got watered down. Thus, it took way more than 4 minutes to cook, because I was waiting for the water to boil out. Bottom line: Make sure your scallops are THAWED!

Chicken Breasts with Lime Sauce

The good news is..... the butter and lime made this chicken MOIST, even when you reheat it in the microwave as a leftover. On the other hand, I agree with another reviewer that less butter could be used. The bad news is..... I didn't like it that well. But, I didn't have chives, I made it without chives. Perhaps the chives is an important ingredient. I cooked it on 200 in an electric skillet. Like another reviewer stated, there was no grease left to get rid of. But, keeping the heat low helped keep the lime juice from evaporating.

Guacamole

I am not a fan of roma tomatoes. I used grape tomatoes. VERY GOOD! I don't think cherry tomatoes would work. One time I accidentally forgot the cilantro and I liked it just as well without the cilantro. I also found that it didn't matter between fresh garlic or garlic powder, but fresh is always better. I used my blender, just threw all ingredients in. TRY THIS ON A TRISCUIT CRACKER!!!!!!!!!

Moist Cinnamon Rolls

I suck at making bread. This recipe worked wonders in a bread machine. Just make the dough and let it rise in the bread machine. Then take it out and make the cinnamon rolls.

Crumbed Avocado Steak

I felt that 2 eggs plus 3 egg yolks was a waste. So, instead of dipping the steak into a beaten "whole" egg, I used the three egg whites from the three egg yolks. Worked fine! I didn't have Dijon mustard, used Spicy Brown, it worked. I would love to try it with Dijon. This recipe is good, but a bit of a pain to make.
