Buffalo Chicken Wings
Anyone with any knowledge of cooking, especially if you've ever eaten buffalo wings, would know that a half teaspoon of hot sauce is ridiculous!! The hot sauce is always the main ingredient. It would make more sense if the butter and hot sauce were reversed. I would say you would need close to a half cup of hot sauce. The way true buffalo wings are made is to deep fry them first and then put them in a bowl and slather them with the sauce and serve with the blue cheese dressing. That's it--ask anyone in Buffalo. If a recipe sounds ridiculous, then alter it!

Caribbean Coconut Chicken
This is an good recipe, but I thought it could use some additions. I used a whole can of coconut milk rather than half and added sesame oil, fresh ginger, jalapeno pepper, fresh lime juice and cilantro, which turned good into extraordinary!! Also, I did not put it in the oven. I browned the chicken really well (I used thighs and breasts)and then removed it from skillet to saute the vegetables. I added the chicken back with the vegetables and coconut milk and finished cooking it on top of the stove. I think I would cut the chicken in bite sized pieces the next time. Serve over rice. Yummy!!

Zucchini-Coconut Cookie Bars
These bars were delicious and moist, more like a piece of cake. I loved the combination of fruits and coconut. I didn't have enough zucchini, so I used summer squash. When it comes to summer-type squash, it's very interchangeable. You have to at least double the amount of frosting if you want to taste it.
