Won Ton Wrapper Appetizers

I thought this was excellent! First, you must brown the sausage, so it will be crumbly and you can blot all the excess fat off. I skipped the olives, but added some finely chopped red peppers when I sauteed my sausage. I prepared FRESH ranch dressing, using the Hidden Valley packet, and prepared it with 2/3 cup light mayo and about 1/2 cup of milk. I wound up using about half of this mixture in the sausage and cheese mix. The wontons turned out to be a lot easier than I thought and I found out through experimenting that you DO NOT have to brush them with oil, or oil the pan. I would recommend that you only lightly prebake the shells, because they will become quite brown when cooking with the filling in them. I took this to a girls night and they were all polished off and everyone wanted the recipe. A big hit!!

Holiday Cranberry Salad

I used only about a cup of sugar with my cranberries and it was sweet enough. I also added some halved red grapes and skipped the nuts (allergies). I think the crushed pineapple really adds to this recipe....it was very yummy and decadent!

Pepperoni Bread

This was an easy and fun recipe. I used a refrigerated thin crust pillsbury dough, which worked really well. It was baked through after about 15 minutes and tasted great!

this is awesome stuff!! I used one block regular and one of low fat cream cheese, it was great. Other than that, followed the recipe exactly and served with corn chips. A total keeper!!!

Roast Sticky Chicken-Rotisserie Style

I'm giving this a 5 start rating for the cooking method, the chicken was delish and very moist. I will make again, for sure.....but this spice blend is very salty. I had read some reviews that warned that....but wanted to see for myself. Next time I will half the salt. I made my chicken with bone-in thighs and they were great. *******update****** used only 2 tsp salt this time around and now the seasoning is perfect for me. I baked leg quarters at 275 for just short of four hours. This recipe is very forgiving, simple and a new family favorite!!

Chocolate Pretzels

Like some of the other reviewers, I couldn't find the circle pretzels. I used the square "waffle" kind. They turned out very cute and the kids loved to help. I am sure I will make these a couple times a year, they are really cute with holiday color m&ms. Right now was perfect for halloween mix m&ms, yum!

Caramelized-Onion Pork

hmmmm....caramelized onions--good. pork tenderloin---good. The 2 items mixed with no seasoning other than salt and pepper = a very bland and uninspired dinner. Sorry for my low stars, but this did nothing for me. It was basically plain pork with lovely onions on top. I will try something marinated next time, this was not worth the effort of pre-cooking the onions. I was hoping for so much more, based on the other good reviews.

Baked Buffalo Wings

We love hot wings at our house, but the deep frying is a giant pain, mess and bad for the hips. This recipe was very good. The wings were crisp and tasty. I did not dip them in the sauce before baking, just did the flour dredging and then refrig before baking. Also, forgot to spray my foil, so they stuck a bit, so I'm sure the non-stick spray is an important step. I tossed my cooked wings in the hot sauce/butter mixture and let it sit for about 10 min before serving. The wings stayed crisp and not soggy. i will make this again (BUT with the cooking spray!!). thanks, I'm sure we will be making these a lot with football season starting! *****Update***** spraying the pan with Pam or other spray is CRITICAL to make sure the wings don't stick. I forgot AGAIN the second time I made these and they really stuck, when I made a try with spray first, then placed the raw wings on, then cooked the first side, then sprayed again....It worked GREAT!

Sausage Potato Medley

I was skeptical, but even my husband enjoyed this one (and he can be kind of harsh on new recipes!). I had a bunch of left over cooked sausage from the weekend which I chopped up and placed over the potato layer. I followed the rest of the recipe pretty close to how it was written, but added some extra spices (cajun blend) to the sauce. This was a great hearty meal and I bet it would be awesome with all pork sausage crumbled in it. A very yummy and versatile brunch or dinner!

Breaded, Fried, Softly Spiced Tofu

I had some tofu on hand that was going out of date and needed to make something. This recipe was a great use of it...I didn't have the yeast, but used some corn starch with the flour and spice mixture. I liked the results of this recipe, a good way to get some extra protein and the only fat was the small amount of oil used for frying. I dipped in a soy sauce/red chili pepper combo. yum!

Banana Sour Cream Bread

Loved this recipe. I halved it, but used 2 eggs (it's hard to half an egg!). I baked 2 loaves at 325 for 70 minutes. I loved the dusting of sugar and cinnamon in the pan and also used some cinnamon sugar on top of the loaves. Very tender, yummy loaves! This is my new go to overripe banana recipe!

Connie's Zucchini "Crab" Cakes

these were very good. Don't fool yourself though, they are NOT going to taste like crab cakes!! However, they are very tasty zucchini cakes! I would recommend a couple of things.....First, take your shredded zucchini and place the pile into a kitchen towel. Then bring up all the corners into a bundle and squeeze it over the sink with all your might! You will have 1/2 cup of liquid or more come out. Second, add about 2 tsp or more of the Old Bay for seasoning. I used 1 1/2 tsp and still felt these were underseasoned. I also skipped the flour step and just placed my cakes right in the oil. very nice dish with some ranch and sour cream on the side. I'll have to try with cocktail sauce, too. thanks though, this was great to use one of those giant zucchinis from my garden that was too big to slice and needed to be shredded!

Zucchini Brownies

these were very good, but I found the chocolate flavor to be lacking. I think a cup of chocolate chips would be a great addition. I found the texture to be cakey, but moist and because of the lowfat ingredients, I will probably try this again. It is always nice serving something SLIGHTY healthier for a family dessert! great idea, thanks.

Banana Margaritas

I halved this recipe and used slightly less triple sec. I used one very ripe banana. I really liked the taste and texture of this drink. I agree with some of the reviewers that a small amounto of banana liqeur would realy pump up the banana flavor, but I really enjoyed the mild taste of this drink. It was tangy and sweet, with a bit of creaminess from the banana and a subtle and yummy banana taste. thanks for this idea!

Zucchini-Chocolate Chip Muffins

I followed some other reviewers and used 1/4 cup oil and 1/2 applesauce. The muffins were very moist and flavorful, loved them. I realized all my choc chips were gone after I'd started the recipe, so I used white Choc chips instead, and they tasted great. I bet butterscotch would be nice with the light cinnamon flavor as well. Great recipe, thanks!

Baked Zucchini Chips

I loved this method for making zucchini chips....and we have a lot of it in the garden right now! I used a combo of panko and regular breadcrumbs and followed the advice of other reviewers who sprayed the pan and tops of the chips with some cooking spray. We gobbled down 2 pans full and I felt NO guilt!! I will make this again and again, tasted great with a dip of ranch and low fat sour cream. thanks for this great idea, I love being able to control the fat and avoid frying!

Chai Tea Mix

I followed the other reviewers suggestions and cut the sugar by half. I also increased the cinnamon and ginger by 50% and made sure to add 3/4 tsp of white pepper to add some spice. This is a very good mix, but when the tea is made up, there is some spice/scum that floats on top and sticks to the edge of the mug. I still enjoy it though, and it's much cheaper than buying prepared mix. Also, I like that I control the sugar and fat, by choosing my ingredients. thanks!

Beer Margarita

we know this as beer punch. We cut down the booze to 6 oz for a batch and it's also good with limade concentrate. After the 1st pitcher or two, we cut WAY back on the vodka, to avoid a too wild party, because these sneak up on you, BIG TIME!!! They are also good with rum or a light tequila. Make sure you have a designated driver!!!
