Mini Cheesecakes I

I made a NUTELLA version of these treats. I used chocolate wafer cookies, mixed with a little melted butter for the crust. I reduced the sugar to 1/2 cup, and added a heaping 1/4 cup Nutella. By the way, 12 oz cookies will make WAY more than needed. I'd say about 5 oz is fine.

Balsamic Chicken with White Beans and Spinach

This is a great week night dinner. I substituted no salt chicken broth for the mushroom soup to accommodate a low sodium diet. I also added 1 tsp of rosemary, and seasoned the chicken breasts with pepper and a little salt. I put the baby spinach on top of the chicken after it was fully cooked, and gave it just another minute to cook with the lid on, otherwise the spinach would have been way over cooked.

Flourless Chocolate Cake II

This cake is perfect - easy and delicious. I used Hershey's Special Dark Cocoa powder and a very good quality semisweet chocolate. I lined the pan with buttered and cocoa-dusted parchment paper. The cake came out perfect and it was an excellent desert for Passover. I made a rasberry coulis which I spooned onto each plate for serving.

Jewish Coffee Cake

I have no idea what makes this cake Jewish, but it is very tasty and easy. Like other reviewers, I omitted the nuts, used brown sugar instead of confectioners, and shortened the baking time to around 45 minutes. I doubled the amount of cinnamon/sugar, although I ended up using not quite all of the doubled amount. I inadvertently doubled the melted butter to 4 Tbl (because I didn't carefully preread the recipe and I thought the butter would get mixed with the cin/sugar). This was actually a tasty mistake - the cake was extremely moist with a nice crunchy topping.

Delicious Apple Sauce

This recipe calls for way too much cinamon. I made 6 servings, which called for 1 tablespoon. I would suggest using 1 teaspoon. I might make another batch and omit the cinamon, and then mix the 2 together.
