Chicken with Asparagus and Roasted Red Peppers

This recipe was absolutely delicious. I added about 1/2 cup of white wine along with the broth at the beginning and it added a little more flavor. My husband loved it and even my son who does not eat asparagus completely enjoyed it.

Southwestern Turkey Soup

This soup was excellent and a wonderful way to use the turkey leftovers. I did add one 14.5 oz. can of drained and rinsed black beans, and one 14.5 oz. can of creamed corn. Instead of vegetable broth I used 4 cups of water with about 2 tbps of chicken soup base but I think either vegetable or chicken broth or fresh chicken or turkey broth would work. I ladled the soup into crocks and put shredded cheddar on top and melted it for a few minutes in the oven. I then added the avocados and sour cream. I will definitely make this again with either leftover chicken or turkey.

Oven Scrambled Eggs

Excellent! Light and fluffy and oh so very easy. I put the eggs in my stand mixer with the salt (reduced to 1 tsp) and freshly ground black pepper (a few turns of the pepper mill) and beat until combined. Then added milk and beat until frothy and completely combined. A keeper!! You can also add cheese or whatever else you like before putting in the over.

Kelsey's Cheesy Bacon Breasts

This was excellent - a really great flavor. I used turkey bacon and cooked it until very crisp, then crumbled it. I seasoned the chicken with salt and black pepper, seared it on both sides in a little olive oil, then put bbq sauce, crumbled bacon and mustard on top and baked it for about 15 minutes which was perfect. I added the cheese the last 5 minutes just for it to melt. It was soooo good
