Tuscan Soup

Easy to make and tastes great. Browned the meat with onions in the pot and added the rest so there were less dishes. Works well with escarole as well.

Really liked but I don't think 48 oz of broth is necessary. Half that amount would have been enough as another reviewer suggested.

I was skeptical about the creamed corn but this turned out very well for the little work it took. It did seem to need some more spices though.

Deep Dish Brownies

These were very good out of the oven but hardened up pretty quickly. Next time I'll try Smart Balance instead of butter.

Spanakopita (Greek Spinach Pie)

Very good. Only used 1/2 an onion. Next time I would probably double the feta to give it more kick but otherwise it was very easy and very tasty. I used prewashed bagged spinach and had no problems.

Tastes like meatloaf! Made this yesterday and it was inedible. The mods were key: 2.5 cups cornflakes, fat free cottage cheese, chopped onion instead of soup mix, put nuts through food processor. After the mods the next day my boyfriend ate several slices with ketchup. Better if cooked longer or if cold.
