Fluffy Baked Eggs and Bacon

Reviewed: Nov. 25, 2010
I thought this was a great recipe. I doubled the eggs, as I wanted a more eggy result vs. bready/dry or too dense, and added a tad more biscuit mix (eyeballed it), and sprinkled the top with cheese before baking. We used bisquick and it still turned out great. This is a good base recipe, and seems like you can add anything you want to it.

Italian Kale

Reviewed: Oct. 24, 2010
We enjoyed this. The kale was a little bitter, but that's probably b/c it's kale. We'll make this again. Thank youl.

Bella's Brussels Sprouts with Bacon

Reviewed: Oct. 24, 2010
Awesome. We prepared exactly as said, and we went back for 2nd's and 3rd's. Anyone who doesn't like brussell sprouts, will like this.

Kim's Macaroni Salad

Reviewed: Sep. 6, 2010
This was great. However, I added regular onions, red and green bell peppers for color. Also, it came out super spicy but I forgot that our home grown jalepenos are on the hot-hot side. But I'll be sure to use this recipe again.

Classic Macaroni Salad

Reviewed: Sep. 6, 2010
I gave 4 stars b/c I changed recipe after initial review and insight from others chefs. However, I bet this recipe could do great on it's own (but a little sweet/tangier). I cut down the suger and vinegar by half, added more mayo to taste, added hard boiled eggs, and I didn't have celery. I turned out great! Thanks!!

Blue Cheese Beef Tenderloin

Reviewed: Jan. 16, 2010
I will make this again for sure. However, I'm not sure if this is DIVINE. It is a great recipe for one who is not sure how to prepare a tenderloin roast. Also, the cook time varies. You have to use a thermometer, and be aware of actual weight after 'trimming' the loin (if you buy the tenderloin not trimmed). Still this is a great staple recipe and will impress.

Baked Brussels Sprouts

Reviewed: Jan. 16, 2010
The end taste was very good. However, I had to uncover, up the temp, and cook for much longer. Next time I'll probably stick to my old staple: coat in olive oil, salt and pepper, lay flat on cookie sheet and turn from time to time for 30 minutes. Temperature depends on size of sprouts (375-425).

Broccoli and Tortellini Salad

Reviewed: May 9, 2009
This is a great recipe for anytime. The tortellini is a nice touch above the usual broccoli salads I've made. I did double the amount of dressing, and used 1/2 regular light mayo, 1/2 light miracle whip, but did not double the sugar. I waited until serving before adding any additional dressing to taste.

Elegant Scalloped Potatoes

Reviewed: Apr. 14, 2009
This was great! I will cut the potatoes a little thinner. If you cut 1/4" thick you may wanna keep it in the oven longer to have the sauce stick more and to be sure the potatoes get a little softer in the middle. Also my potatoes were LARGE, so I had at least 1-2 potatoes left over as the pan wasn't big enough. Definitely need to let the potatoes cool before slicing. I'll be making this again!

Broccoli Salad IV

Reviewed: Apr. 14, 2009
Exactly what I was looking for. There seemed to be extra mayo and everything else. So I will keep extra broccoli on hand to add to the mix. There really isn't a standard size broccoli head.

Pretzel Turtles

Reviewed: Mar. 12, 2009
Great recipe. VERY easy and a hit! I drizzled melted white chocolate over top. Triple the recipe and take it to a cookie exhange and parties for gifts. Also and quick item to do for last minute dessert to bring to a meeting, party or book club.

Macaroni Pie

Reviewed: Feb. 22, 2009
I have been looking for that lasagna like/dense mac n chse recipe that I used to have as a child. If you are looking for a gooey creamy or runny recipe, this may not be it. I will be using a little less pasta and adding some spices to add some flavor. Gals/guys that gave bad reviews; "Pie" is in the title. Stay tuned... I really enjoyed this recipe and will make it again.

Bacon Gravy for Biscuits

Reviewed: Feb. 5, 2009
Mine turned out great. I followed the tidbit that raouglysgirl gave: "If it's 2 Tbsp. of grease, use 2 Tbsp. of flour and 2 cups of milk." I took note to pay attention to adding the flour and milk slowly. I used bacon grease I had reserved from cooking bacon previously which probably created greater flavor. I wanted to mimic my grandma's recipe and it was very close. I'll make this again.

Fried Onion Rings

Reviewed: Jan. 20, 2009
The onion rings came out a little thin/too light. And I think the batter lacked a little flavor. Be sure to add some spices like cayenne or paprika or something witha little more gusto.

Savory Vegetable Beef Soup

Reviewed: Jan. 20, 2009
This was missing something. I think that the V8 was a little overpowering. It seems that this recipe needed a little more meat flavor. I added some Sirachu hot sauce to spice it up when served.

After-Thanksgiving Turkey Soup

Reviewed: Dec. 29, 2008
We enjoyed this recipe. The broth was a little thin (this could've been our fault), so I took some broth out and made separate pot with bisquick dumplings (added 2 cups water and a buillon cube) and it was fabulous. You can even doctor or experiment with this great recipe.

Shaved Brussels Sprouts with Bacon and Almonds

Reviewed: Dec. 29, 2008
This was great. We used about 2 lbs or less of sprouts. My husband cut the sprouts up in 1/3's or 1/4's and it still turned out great. We realized we didn't have almonds and used pistachios and still good. I'd recommend this to brussel sprout fans.

Simple Turkey Chili

Reviewed: Dec. 23, 2008
This was a flavorful tasting basic chili recipe. We didn't drain the beans nor crushed them, and for additional liquid we added a can of chili tomato sauce (vs. water). It was a big hit.

Turkey Dumplings

Reviewed: Dec. 18, 2008
I gave this three stars because we did have to alter this recipe during preparation. However, we really enjoyed the end result and will make this again. I kept chicken broth handy to add to the pot as I noticed during the simmering process of the turkey that not much liquid was present and I feared I would not be able to add the dumplings. Also, I used 1/2 water and 1/2 chicken broth to start (following the others advice). Last, I followed the bisquick recipe for dumplings (mix and milk). I love dumpling recipes, and this was a nice and easy favorite.

French Onion Soup I

Reviewed: Dec. 9, 2008
This was a great recipe. I sometimes wonder why people rate things highly after they change the recipe by adding, exchanging or removing ingredients. I realized that in some cases you have to use your best judgement by changing/adding ingredients slightly as your dish transforms to suit your taste. We followed the recipe, but added three beef buillon cubes, only added a splash of red wine and used Swanson's beef broth (not concetrate) as we didn't realize the recipe called for concentrate. Also, since the broth was not concentrate we reduced the amount of water added down to 1 cup. We topped with both provolone and swiss cheeses. We have made this about 4 times now. Yum.
